It’s a big day for Laughing Spatula. You see this is my 200th post! I know, I know, it’s a pretty big deal. Banners are flying, confetti is falling, the paparazzi are hovering outside. It’s like the freakin’ Oscars or something! Red carpet, little gold men…oh wait, that’s just my neighbor. He’s a bit of an eccentric….
In celebration of this auspicious occasion, I am re-posting the most popular recipe on this site. When I say ‘most popular’, I mean like way more popular. Like by hundreds of thousands of views more popular. Like Oprah vs Ellen more popular! Like Marcia Brady vs. Janet Brady more popular! Like…oh you get it….
There are days that I think I should change the name of this blog to chickenavocadoburger.com. To say that I never saw this coming, is an understatement but it shows how strong the Paleo movement is right now. Because that’s who loves this recipe! All you Pale0ntolgogists…wait? Thats not right is it?… well, you know what I mean. Paleo is sweeping the nation and for good reason. It’s basic good for you food. Meat and veggies sprinkled with a bit of fruit and some good fat. Thats where the Avocado comes in. Healthy fat. I love healthy fat!
Now you can eat these even if your not a Pale0ntologist….or whatever, because they are really really good with an almost creamy texture. I use bread crumbs (because I still dip my toe in the carb world) but almond meal works as a great binder as well. Don’t skip the garlic if you can help it and be generous with the salt and pepper. Grill on a stove top pan or on an outdoor bbq but be quick about it. 3-4 minutes on each side will do ya.
You can sub ground turkey but I’ve like the chicken a lot better and find a firm but ripe avocado so the chunks don’t get all mushy and stuff.
Thanks for stopping by…you have made the last four years of blogging a pleasure! I love my followers and my newbies as well! Hugs!

When you say grill them…..can I do this on the gas grill outside…..will they hold together for that? I have a couple fussy eaters….any extra kick I can add for them. For me I will leave out seasonings since my stomach won’t handle them.
Kathi @ LaughingSpatula.com says
Grill indoor or out Janet!
Janet says
Thanks….will give them a try tomorrow.

Hi! I don’t have ground chicken. Will finely chopped raw chicken worked? Or maybe pre-cooked and chopped? Thanks!
Kathi @ LaughingSpatula.com says
Hi Katja, You can finely chop the chicken. You might want to add an egg to help bind it depending on how small you chop it. I wouldn’t recommend the precooked for this recipe. Thanks! Kathi

Can you do without the almond meal/panko crumbs? what does this add to the recipe?
Kathi Kirk says
It acts as a binder to hold the meat together and it helps to soak up moisture. Ground chicken is sometimes a bit soggy. That being said, you can make these without the binder. They might just be a bit more crumbly. Hope that helps!
Katie says
It binds them and makes them more moist as well.
