Chile Con Carne: Chili without beans which makes it great for folks who’s bodies don’t like beans…the potential for humor here is overwhelming. I come from a long line of people who think the funniest thing on earth is gas…the human kind. You wanna see a family fall to pieces? Bring a whoopee cushion and a fart machine. They will be rolling on the floor laughing for hours…never gets old.
Annnyyywayyy, back to the Chili! I used ground turkey…beef is not my friend but if it’s yours, use it! I cooked this in the slow cooker but you could use your stove top just as easily. It takes about an hour for the sweet potatoes to soften up, so give yourself a little bit of time…or precook the sweet pots for a quicker meal.
This chili is Whole30 compliant..no beans! No sugar added canned tomatoes and lots of fresh veggies. I am almost at the half way point of my Whole30, Woot Woot! Click here for full story. It would be a lie to say that I was not looking forward to the end. It’s a bit of work to keep my fridge stocked with meat and fresh veggies and dining out, (one of my favorite things to do) is difficult, but I am doing it! You have to be thinking about this all the freakin’ time! Sometimes I just want a cracker with some cheese on it….jeesh! But I have very good news on the health front. I am having tremendous results on reducing the inflammation of that nasty nerve in my leg/foot. My ankle and foot are noticeably less swollen, ie: a lot less pain. The Whole30 is working! I didn’t expect such great results as I had lost 25 pounds and ate very healthy prior to starting the program. I didn’t think the changes that I was making were so drastic that they would make an impact. But they certainly did. I am a believer…I have drank the Whole30 Kool-aid! (well not really…that would be a sugary processed beverage)
It took about 10 days before any noticeable difference. I have probably healed more in the last week than in the last two months. I have a long road ahead before I hit ‘normal’ on the me-o-meeter, but at least I feel like I am on my way. Still lots of pain in the evening …”it”, (aka: my leg nerve), gets so pissy at 5pm…normal cocktail hour. It wants some wine. Spoiled brat. ‘Well just hold on stupid leg nerve…I’m gonna get you some in a couple weeks.’ Jeesh…the nerves these days. 🙂
When this 30 days is over….and it will be…I dream about it. I will be confirmed Paleo. I believe in the concept and I like how my body responds. I need a good book on Paleo. From what I hear it’s much more lenient than Whole30…can’t wait to add some ‘regular’ food back in!

- 1 pound ground turkey, chicken or beef
- 1 green pepper - chopped
- 1 large yellow onion - chopped
- 1 large sweet potato - peeled and cubed
- 2 14oz cans diced tomatoes with chili's
- 1 12 oz can tomato sauce
- 2 heaping tablespoons chili powder
- 1 tablespoon ground cumin
- ½ teaspoon dried chili flakes
- 1 teaspoon ground garlic
- Salt and Pepper to taste
- In large skillet brown the ground turkey or beef
- Drain any accumulated fat and place meat into slow cooker (I don't care for the grease of the meat...you can certainly leave it if you prefer).
- Add all the veggies back to the skillet and sauté until tender.
- Add veggie mixture to slow cooker
- Add all remaining ingredients.
- Give a good stir and set at low for 5 hours.
- Taste for seasoning - adjust. Serve with fresh avocado.
