Quick Chicken Chowder with Mushrooms

  • 2 cups cooked chicken cubed
  • 2 tablespoon butter or olive oil
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 1 cup yukon gold or red potato cubed (I like it with peel left on).
  • 3 cloves garlic chopped
  • 8 oz sliced cremini mushrooms
  • 1/4 cup flour
  • 4 cups chicken stock
  • 1/2 cup half and half
  • 2 teaspoons dried thyme or 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


  1. Melt butter in large dutch oven or soup pot.
  2. Add carrots, onion, celery, mushroom and potato .
  3. Saute until onions and carrots are just tender, about 5 minutes.
  4. Add flour and stir well until flour is no longer visible.
  5. Add stock, half and half, thyme, salt and pepper and cooked chicken.
  6. Taste for seasonings...more salt? more pepper?
  7. Simmer for 10 minutes or until potatoes are tender.
