  • 1 cup all purpose flour
  • 1/2 cup brown sugar packed
  • 1/3 cup unsweetened cocoa powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup coffee brewed and cooled
  • 1/2 cup water
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips


  1. Preheat oven to 350 degrees.
  2. Spray muffin tin with nonstick spray or line with cupcake liners.
  3. Combine, flour,brown sugar, cocoa, baking soda, and salt in medium bowl.
  4. In small bowl, combine coffee, water, applesauce, vinegar, melted butter and vanilla.
  5. Add wet ingredients to dry. Combine just until moist.
  6. Fold in chocolate chips.
  7. Fill muffin tins half way full.
  8. Bake for 20 minutes or until top bounces back when gently pressed.
