Pumpkin Cheese Cake Bars

  • Crust
  • 1 cup flour
  • 1/4 cup white sugar
  • 6 tablespoons cold butter
  • 1/4 teaspoon salt
  • Filling
  • 2 - 8 oz packages cream cheese softened
  • 1 1/4 cup canned puree pumpkin
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 eggs
  • in Frosting a pinch use canned :
  • 8 oz cream cheese
  • 1 cup butter
  • 2 cups powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon Vanilla


  1. Preheat oven to 350 degrees
  2. Spray a 9 x 13 in baking dish with cooking spray.
  3. Combine all crust ingredients in a food processor and pulse until crumbly.
  4. Press into bottom of pan.
  5. Bake for 15 minutes and cool.
  6. Using an electric mixer, beat cream cheese and sugar until smooth. Add pumpkin purée , vanilla, pumpkin pie spice and salt and beat for a few more minutes. Add eggs one and a time and continue to mix until well blended. Pour onto cooled crust and bake for about 45 minutes or until a toothpick inserted in the center comes out clean. Cool completely in the fridge. Couple hours or over night.
  7. Using an electric mixer, blend all frosting ingredients until smooth and spread on cooled cheesecake. Back in the fridge for an hour or two and slice up! Store in the refrigerator.
