Ingredients
1 poundground chicken- ground turkey or diced chicken
2largezucchini - diced
1largebell pepper- diced, any color
1mediumonion- diced
2clovesgarlicdiced
1cupcorn- fresh, frozen or canned
114 ouncecan diced tomatoes- drained well
2teaspoonsItalian seasoningor 1 tsp dried basil and oregano
1teaspoonsalt
1/2teaspoonground black papper
1cupgrated cheese- any variety including parmesan
Instructions
Heat a large skillet over medium high heat. Brown the chicken until cooked through. Drain any grease.
Add chopped onion, bell pepper and garlic to meat. Continue to saute for about 3-4 minutes until veggies are soft.
Add corn, drained diced tomatoes and Italian spices. Stir and simmer until warmed though.
Add diced zucchini - saute for just a few minutes until zucchini is just soft. Taste - more salt? spices?NOTE: If there is a lot of residual juice in the pan, remove with a spoon and discard.
Sprinkle with cheese, cover and cook for 5 minutes until the cheese is melted.
