Marinated Cheese

An impressive, crowd pleasing party appetizer that only takes a few minutes to put together.

Ingredients

  • 1 8 oz block of pepper jack
  • 1 8 oz block of Gouda
  • 1 8 oz block of Cream Cheese

Marinade

  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup diced roasted red peppers (plus 2 tbsp of juice from the jar)
  • 3 tbsp fresh chopped parsley
  • 1 tsp fresh chopped rosemary
  • 3 tbsp diced red onions
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp granulated garlic
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Remove cream cheese from wrapper and place in freezer for 30 minutes beforehand (this helps make cutting easier).
  • Mix together marinade ingredients. Whisk well to combine, and set aside.
  • Cut each block of cheese length wise, then horizontally into 1/4 inch pieces. Remove cream cheese from freezer, and cut into similar sized slices.
  • Arrange alternating cheese in a square dish. Set aside.
  • Rewhisk marinade and pour over cheese. Spoon liquid over cheese continuously to disperse amongst entire dish.
  • Refrigerate for minimum 3 hours, but a maximum of 48 hours before serving. Enjoy!
