- 1 8 oz block of pepper jack
- 1 8 oz block of Gouda
- 1 8 oz block of Cream Cheese
Marinade
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1/4 cup diced roasted red peppers (plus 2 tbsp of juice from the jar)
- 3 tbsp fresh chopped parsley
- 1 tsp fresh chopped rosemary
- 3 tbsp diced red onions
- 1 tsp lemon juice
- 1 tsp lemon zest
- 1 tsp granulated garlic
- 1 tsp salt
- 1 tsp black pepper
Remove cream cheese from wrapper and place in freezer for 30 minutes beforehand (this helps make cutting easier).
Mix together marinade ingredients. Whisk well to combine, and set aside.
Cut each block of cheese length wise, then horizontally into 1/4 inch pieces. Remove cream cheese from freezer, and cut into similar sized slices.
Arrange alternating cheese in a square dish. Set aside.
Rewhisk marinade and pour over cheese. Spoon liquid over cheese continuously to disperse amongst entire dish.
Refrigerate for minimum 3 hours, but a maximum of 48 hours before serving. Enjoy!
