Spinach Power Salad with Honey Lime Vinaigrette

- 1 pound fresh spinach
- 1 cup fresh blueberries
- 1 tomato diced
- 1 avocado sliced
- 1/2 cup walnuts
- 1/2 red onion thinly sliced
- 1/2 cup feta cheese
Honey Lime Vinaigrette
- 3/4 cup extra light olive oil
- 1/4 cup apple cider vinegar
- 1 lime, zested and juiced
- 2 tablespoons minced shallots can sub red onion for shallot
- 3 tablespoons honey
- 1/2 teaspoon salt
- 1/3 teaspoon pepper
Combine salad ingredients in large container or salad bowl.
Toss only the amount of salad you will be eating right away. Save the rest for your lunchbox and serve the dressing in a separate container.
Combine vinaigrette ingredients in jar or container with tight fitting lid and shake. Store in fridge.
Toss only the salad you are eating. Spinach wilts fairly quickly.
