Baked Chicken Meatballs

These Baked Chicken Meatballs are easy, healthy and juicy!  Made with ground chicken and baked for an easy hands off meal.  Serve with pasta, rice or as an appetizer.  Pefect for meal prep and they freeze really well.

There is something so comforting about Meatballs!  The ingredients mimick a meatloaf but the feeling just is not the same.  Make a double batch and freeze these baked or unbaked for an easy weeknight dinner prep.

Ingredients for Baked Chicken Meatballs –

  • ground chicken – we prefer 93/7 fat content in lieu of ground breast meat which can be very dry.
  • bread crumbs – panko or plain
  • parmesan cheese – grated
  • egg
  • garlic powder
  • onion powder
  • paprika
  • olive oil
  • italian seasoning
  • salt and pepper

These ground chicken meatballs are just so simple and so good! Toss all the ingredients in large bowl and get in there with your hands.  Roll them up and in the oven they go!

Use a small cookie scoop if you want them perfect.  Keep them abour 1 1/2 to 2 inches.  It is more important to keep them close to the same size so they bake up at the same time.  You can go big or small, just watch the internal temp to not over cook.  165 degrees with your handy meat thermometer.

How to keep baked meatballs juicy –

  • careful not to pack them too tightly.
  • do not overbake – thats the biggest culprit.  Internal temp of 165 degrees.
  • juicy meatballs require a little fat which is why we recomment 93/7 fat content ground chicken in lieu of ground chicken breasts.

Can I freeze meatballs? –

  •  freeze them baked or unbaked!  If freezing unbaked put them on a cookie sheet and freeze until solid.  Add to a freezer bag.  Thaw at room temperature for 20 minutes or just bake them up frozen.
  • if already baked simply add to a freezer bag.
  • Freeze for up to 3 months

How do I serve Baked Ground Chicken Meatballs –

  • with pasta – simply simmer in a good store bought marinara.
  • in a sub sandwich- tuck into a french roll, top with marinara and cheese.
  • these make a great appetizer – serve with a side of Greek Yogurt Mustard Sauce.

Ingredients

  • 1 pound ground chicken - 93/7 fat contents
  • 1/2 cup bread crumbs - panko or traditional
  • 1/2 cup grated parmesan
  • 1 large egg
  • 1 tablespoon olive oil - this will keep the meatballs juicy
  • 1 teaspoon dried italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat oven to 375 degrees. Line a sheet pan with parchement, foil or spray with non stick spray.
  • In mediumm size bowl, combine ground chicken, parmesan, bread crumbs, egg, olive oil and seasonings. Gently mix and shape into 1 1/2 to 2 inch meatballs . Be careful not to over pack which can create dry meatballs.
  • Place on the sheet pan. Bake at 375 degrees for about 20 minutes. Meatballs are done when internal temperature reaches 165 degrees.
  • Serve alone or with pasta and store bought marinara. Store in the refrigerator for up to 4 days or freeze for up to 3 months.

Notes

Serving is about 5 meatballs.
