Tuscan Orzo Skillet Dinner

If you’re familiar with our recipes, you know how much we favor orzo around here. This Tuscan Orzo Skillet Dinner uses ground chicken, roasted red peppers, spinach and feta for a simple 20 minute dinner the whole family loves. It’s cozy, comforting, and delicious. My favorite part is how easy it is to make. You only need one pan!

Tuscan Orzo Dinner

About this recipe: I always have orzo in my pantry. I generally buy it at Trader Joes, it’s less than $3 per bag, and the fact that you can make so many meals with orzo is why I keep it a staple in my house.

This recipe combines ground chicken, which you’ll sauté first, to a golden brown. If you can, try to find a ground chicken that combines both chicken breasts, and chicken thighs. This will help the chicken stay moist, and it also gives the dish the best flavor with a little more fat than traditional ground chicken breast. 

Ingredients for Tuscan Inspired Orzo Dinner: 

  • Ground Chicken
  • Orzo 
  • Jarred Roasted Red Peppers
  • Garlic 
  • Salt
  • Pepper
  • Chicken Broth 
  • Spinach 
  • Feta Cheese

Making a One Pan Orzo Dinner

A one pan orzo dinner is a dish that combines 2 parts liquid to 1 part orzo. You can use chicken broth, wine, tomato sauce, basically, any liquid that gives flavor and cooks the orzo in a pan with other ingredients. For this recipe, I used chicken broth only. You could do 1/4 cup white wine, and 3/4 cup white wine for a little added flavor.

Steps to make this recipe: 

  • Saute the ground chicken in a little bit of olive oil on medium high heat. You’ll want to add the ground chicken to a hot pan to properly sear it and give it a nice golden color.
  • Once the chicken has a nice golden brown, add in chopped roasted red bell peppers and stir until fully combined. Next, add in garlic, salt, pepper and the orzo. Allow mixture to sauté together for a few minutes before adding chicken broth.
  • Cover the pan with a lid, and turn the heat to low.
  • Allow the orzo to absorb the liquid, stirring about every 5 minutes. Be cautious not to over stir, as it can make for starchy orzo. 
  • Once the liquid has been absorbed, turn off the heat. Add in feta cheese and stir to combine, followed by a handful of fresh chopped spinach. 

I like to top mine with a little extra feta when I serve it, the more feta, the betta!

Equipment

  • 1 skillet pan with lid

Ingredients

  • 1 lb ground chicken
  • 2 tbsp olive oil
  • 1/2 cup roasted red peppers (diced)
  • 1 cup orzo
  • 2 cups chicken broth
  • 1/2 tbsp fresh garlic (chopped)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup feta cheese (plus extra to garnish with)
  • 1 cup fresh spinach

Instructions

  • To a large skillet on medium heat, add olive oil, and ground chicken. Saute ground chicken until lightly browned.
  • Add drained/chopped roasted red peppers. Stir to combine. Add in orzo, salt, pepper, and garlic. Sauté for 2-3 minutes.
  • Reduce heat to low, and add chicken broth. Place lid on pan. Stir about every 5-7 minutes, or until liquid is fully absorbed. Remove from heat.
  • Stir in feta cheese, and spinach. Serve warm, and enjoy.
