One Pan Garlic Butter Chicken

This One Pan Garlic Butter Chicken is a dish you will make over and over again.  Our family loves it and it is great for meal prep.  We add the broccoli right in with the chicken for a true One Pan meal!

Tender bites of chicken are seared a cooked in a silky easy to make butter sauce.  We cook the veggies right next to the chicken in the same skillet.  Make a large batch and meal prep for lunches or dinners!

Ingredients for Garlic Butter Chicken –

  • Boneless chicken thighs, breasts or tenders all work great for this easy recipe.
  • Garlic
  • Butter
  • Italian Seasoning
  • Paprika
  • Onion powder
  • Olive oil
  • Broccoli or any other quick cooking veggie you like like onions and peppers, asparagus or peas.

Simply dice up your chicken in bite size pieces.  Using a large skillet, brown the chicken in a combination of olive oil and butter.  Careful not to overcrowd the pan. You may have to do two batches depending on the size of the skillet. (The photo’s below are a half batch or half pound of diced chicken.)

How to Make Garlic Butter Chicken Bites

What kind of chicken should I use –

  • We used boneless chicken thighs but boneless chicken breasts or tenders would work just as well.

What are some tips to making the best Butter Chicken –

  • Use unsalted butter if possible so you can control the salt.
  • Use fresh garlic.
  • When searing the chicken bites, put them in the pan and leave them alone. Don’t flip for 3-4 minutes until a nice crust forms.
  • Serve with rice or potatoes.  We love how this makes an easy chicken bowl!

Ingredients

  • 1 pound boneless chicken thighs, breasts or tenders
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons butter unsalted if possible
  • 1 tablespoon olive oil
  • 4-5 large garlic cloves minced
  • 1 1/2 cups broccoli

Instructions

  • Dice the chicken and toss with spices. Italian Seasoning, Paprika, Onion Powder, salt and pepper.
  • Heat one tablespoon olive oil and one tablespoon butter in a large heavy skillet over medium high heat.
  • Add the diced chicken to the pan being careful to not overcrowd the pan. (You may need 2 batches). Sear the chicken without turning for 3-4 minutes. Flip and cook another 3-4 minutes until crispy and brown. Remove to a plate.
  • Reduce the heat to medium. Add the two remaining tablespoons of butter. Add the garlic and saute until fragrant and soft.
  • Add the chicken back to the pan and coat with the butter mixture. Move the chicken over to the side of the pan and toss in the broccoli sauting until crisp tender.
  • Serve with rice or potatoes if desired.

Notes

Store any leftovers in the refrigerator for up to 3 days.  Freeze for up to 3 months.
