Mexican Lasagna

We love this Mexican Lasagna!  Layers of tortillas, taco meat, refried beans, corn and cheese.  It’s a hearty casserole perfect for weeknight dinners, potlucks or feeding your hungry crowd!

What is Mexican Lasagna? – Its a delicious mash up of Italian and Mexican.  Layers of tortillas, taco meat, corn,  and cheese that will feed your crowd!  We love it with a simple side salad and a dollop of sour cream.

Ingredients –

  • ground beef, turkey or chicken
  • corn tortillas – we do not reccomend flour tortillas as they get gummy when baked in the sauce
  • refried beans
  • taco seasoning
  • onion
  • crushed tomatoes
  • canned green chilies
  • grated Mexican style cheese
  • garlic, salt and pepper
  • garnishes such as sour cream, salsa and guacamole

Let’s make Mexican Lasagna –

Use your favorite 9 x 13 pan – this recipe will feed 8 hungry people

In a large skillet brown the meat and onion. Add the tomatoes, chilies and seasoning.  Simmer for 10 minutes.

Add a small amount of sauce to the bottom of a 9 x 13  baking dish

Layer the tortillas over the sauce.  Overlapping is fine as they soften up while baking.   Smear on the refried beans.

PRO-TIP – heat the refried beans in the microwave for 40 seconds to soften them up before spreading on the tortillas.

Top with the beef and tomato mixture, corn and shredded cheese.  Repeat the layers.

How to layer Mexican Lasagna –

  • Spread small amount of sauce in the bottom of a 9 x 13 baking dish
  • Tortillas
  • Refried Beans
  • Meat sauce
  • Grated Cheese
  • Repeat ending with grated cheese.

We like to serve this with a simple side salad and all your favorite Mexican toppings.  Sour cream, salsa and guacamole.

Substitutions, tips and tricks to make Mexican Lasagna

  • use any kind of ground meat – chicken, beef or turkey
  • use tomato sauce in lieu of crushed tomatoes
  • add in more veggies!  Peppers, zucchini, carrots and celery to name a few
  • sub black beans for refried beans
  • TIP:  heat the refried beans in the microwave for about 40 seconds to soften them up before spreading on the tortillas
  • HOW TO STORE  – Refrigerate leftovers in an airtight container for up to 4 days. Freeze  for up to 3 months.

Ingredients

  • 1 pound ground beef chicken or turkey
  • 1 small onion diced
  • 2 16 ounce can crushed tomatoes
  • 1 7 ounce can green chilies
  • 2 1 ounce packages Taco Seasoning
  • 12 corn tortillas
  • 1 16 ounce can refried beans - heat in the microwave for 45 seconds to soften
  • 1 cup corn frozen thawed, fresh or canned
  • 3 cups grated Mexican style cheese
  • Mexican Condiments like sour cream, salsa and guacamole

Instructions

  • Preheat the oven to 350 degrees. Spray a 9 x 13 baking dish with non stick spray.
  • Brown ground beef and onion in a large skillet. Drain excess grease if any.
  • Add crushed tomatoes, chilies and taco seasoning to cooked ground beef. Stir and simmer for 10 minutes until thick. Set aside.
  • Spread about 1/3 of a cup of the meat mixture on the bottom of the casserole dish.
    Layer half the corn tortillas. Overlapping is fine
    Spread on half of the refried beans
    Top with half of the taco meat
    Sprinkle with half the corn
    Top with half the cheese
    REPEAT - ending with grated cheese
  • Bake at 350 degrees for about 40 minutes and edges are bubbly and its cooked through.
  • Serve with all your favorite Mexican condiments.
