Easy Tortellini Casserole

Make this easy and comforting pasta casserole in no time! This Tortellini casserole has just a few ingredients but tons of flavor! Feed a crowd or enjoy the leftovers. Cheesy pasta dish that is perfect for Holidays, Sundays or any day you want some serious comfort food!

What you need to make this delicious Tortellini Recipe:

  • 24 ounces fresh or frozen Cheese Tortellini
  • 1 pound Italian sausage
  • 32 ounce good Marinara Sauce (we love Raos)
  • 1/2 cup chopped onion
  • 2 cups grated mozzarella cheese

Thats only 5 little ingredients to bang out this pasta casserole that will feed you for days. The sausage does all the work, making that store bought Marinara taste like homemade!

How to make Easy Tortellini Casserole:

  • Start by getting your water boiling for the pasta.
  • Brown your sausage and onion. Remove any excess grease.
  • Add your marinara and simmer.
  • Cook your pasta according to package directions, drain.
  • Toss into your pasta sauce.
  • Add half of your pasta and sauce into a 2 quart casserole or a 9 x 13 baking pan.
  • Top with cheese.
  • Add remaining pasta and finish with cheese.
  • Bake for 20 minutes and boom!

Baked Tortellini Tips:

  • We love fresh tortellini for this recipe but you can sub frozen (or even dried in a pinch). Just cook per the instructions on the package being careful not to over cook as the pasta will continue to cook up in the oven. Al Dente is the best…slightly firm with a soft center.
  • Store this easy casserole in the refridgerator for up to 3 days or freeze for up to 3 months.
  • Substitute ground beef, chicken sausage or even pepperoni for the italian sausage if desired. Or go meat free! Delicious either way.
  • We love this easy casserole for the Holidays. It feeds a crowd! It’s like a lazy day lasagna 🙂
  • Serve with a simple green salad and baguette.

This cheesy casserole includes Tortellini pasta, sausage and store bought marinara! So easy and so delicious!

Ingredients
  • 24 ounces cheese tortellini – fresh is best but frozen or dried is okay
  • 32 ounce jar quality marinara Sauce – such as Rao's or Barilla
  • 1 pound italian sausage
  • 1/2 cup chopped onion
  • 2 cups grated mozzarella cheese
Instructions
  1. Preheat oven to 375 degrees. Spray a large casserole dish or 9 x 13 baking dish with non stick spray for easy clean up.

  2. Bring a large pot of water to boil. (start the sauce while the water comes to a boil).

  3. Heat a large skillet over medium high heat. Cook sausage and onion until fully cooked and crumbly. Drain any excess grease if necessary.

  4. Boil pasta according to package directions, less 3 minutes so tortellini is just al dente. Firm on the outside but soft in the middle. (It will continue to cook with the sauce in the oven). When cooked, drain but do not rinse.

  5. Add marinara to the cooked sausage and onion. Bring to a simmer, stirring occasionally.

  6. Combine the cooked tortellini with the sausage marinara. Stir gently to not break up the pasta.

  7. Layer half the tortellini in a large baking dish and top with half the cheese. Top with remaining tortellini and finish with remaining cheese.

  8. Bake at 375 degrees for about 20 minutes until sides are bubbly and center is hot.

  9. Serve with a simple green salad and baguette if desired.
