4 Healthy Vinaigrettes….10 ways to lose 10 pounds…. 8 ways to improve your love life….15 ways to keep from going crazy!  Quantity headlines are all the buzz these days so I thought I’d jump in the game!  And why not?  These are 4 tasty Healthy Vinaigrettes…not 1, not 2 or 3 but 4 my peeps!  (yes, I still say peeps…so 2010).
Here I am at the end of week 1 of my Anti-Inflammatory diet. Â No Gluten, Dairy, Sugar and everything has to be Organic..there are several other rules that I won’t bore you with but it works and I am feeling better everyday. Â The weight is coming off fast and I’m not ‘totally suffering’. Â I mean I’m dieting right? Â Sure, I’m suffering. Â There was no pizza and Chardonnay on Friday night, just mineral water, lime and a good book. Â But ya know what? Â I really enjoyed it! Â I am lucky that Mr. Laughing Spatula is joining me so I don’t have to smell the pizza and wine…is that love or what?
The four healthy vinaigrette dressings pictured above (from left to right):
Dijon Vinaigrette, Skinny Caeser (posted previously), Fresh Tomato Vinaigrette , and Ginger Sesame Vinaigerette.  Now technically the Caeser isn’t a vinaigrette because it includes yogurt but I included it anyway because it is so good.
Dijon Mustard Vinaigrette
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- 3 tablespoons Dijon mustard
- 2 shallots, quartered
- 1 garlic clove, chopped (finley chopped if not using food processor method)
- Coarsley chopped fresh parsley
Blend first 5 ingredients together in a food processor or shake up in jar. Â Toss in parsley.
Skinny Caeser Dressing
- 1/2 cup grated Parmesan
- 1/3 cup fresh lemon juice
- 1Â large garlic clove
- 1Â tbsp Dijon mustard
- 1 tablespoon anchovies paste
- 2 tbsp extra virgin olive oil
- 1/2 cup Plain Greek Yogurt
Blend all ingredients in a food processor. Â Store in container in fridge for up to 5 days.
Fresh Tomato Vinaigrette
- 1 fresh tomato – chopped (you could use roasted tomatoes as well)
- 3/4 cup olive oil
- 1/4 cup white wine vinegar
- 1 garlic clove – chopped
- 1/2 teaspoon dried oregano
- salt and pepper
Blend all ingredients in a food processor. Â Store in container in fridge for up to 5 days.
Ginger Sesame Vinaigrette
- 1/2 cup olive oil
- 1/4 cup sesame oil
- 1/3 cup rice wine vinegar (white wine vinegar will do in a pinch)
- 1 tablespoon minced fresh ginger
- 1 tablespoon toasted sesame seeds
Blend all ingredients in a food processor or shake up in a jar. Â Store in container in fridge for up to 5 days.
I have not bought store bought salad dressing in probably close to a decade-why? A good vinaigrette is easy to prepare and so much better tasting on a fresh salad.
