Nothing could be easier than this Egg, Sausage and Hash Brown Casserole served along side a beautiful Frozen Mimosa! We used chicken sausage to lighten it up and frozen hashbrowns to make it easy on the cook!
We love this casserole! Stuffed with cheese, sausage, peppers and frozen hash brown potatoes. Say what? You bought something other than ice cream in the frozen food aisle! I know! We don’t do frozen much around here, but these little potato nuggets are a gift! Just cubed potatoes that have been frozen. Turns out they are nothing to be scared of. mmmmm, what else is lurking in that frozen food aisle that I’ve been missing….
We used a low fat chicken sausage but you can go whole hog (a little pork humor there). Mild or spicy, breakfast sausage or Italian sausage. They will all work! We don’t like tons of spice so a chicken breakfast sausage did the job for us.
How to make this Easy Breakfast Casserole
with Sausage and Hash Browns
First cook up the sausage, peppers and onion and add to a large bowl. Add the cheese and slightly thawed hash browns.
Whisk up the eggs and cream, pour it right over. So now you are basically done. Was that easy or what! Pour into your casserole dish.
TIP: You are probably wondering why I didn’t just mix it all up in the baking dish itself. You can do that, but wipe down the inside of your casserole dish or the egg that stuck to it while mixing will brown. It won’t be pretty and we like pretty :). I find it easier to just mix it up separately.
NOTE: Microwave the frozen hash browns for about 4 minutes to just semi-thaw them. If the potatoes are frozen it will take much longer to cook and will make your eggs tough.
Ready for the oven!
Bake it up for about 40-50 minutes.
Top with more cheese and AVOCADO!
Some swaps and add-ins for this yummy Breakfast Casserole
with Sausage and Hash Browns
- Poblano or jalapeno pepper if you like a little more spice.
- Roasted red peppers in place of the regular red pepper.
- Wrap it up in a tortilla.
- Top with sour cream.
- Sub bacon for the sausage.
- Omit the cheese to make it Paleo and Whole30.

Breakfast Casserole with Sausage and Hash Browns
Ingredients
- 1 pound bulk sausage chicken or pork, mild or spicy
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- 8 eggs
- 1/2 cup half and half whole or 2% milk will work as well
- 4 cups frozen hashbrowns, cubed type shredded will work as well
- 2 cups grated cheese, we like sharp but any kind will work
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 avocado, cubed (optional)
- 2 green onions, sliced (optional)
Instructions
- Preheat oven to 350 degrees
- Brown sausage in medium skillet until cooked through. Transfer to large bowl. (if there is a large amount of fat in skillet, remove all but 1 tablespoon).
- In the same skillet. Saute red peppers and onions until just tender. Add to bowl with sausage along with 1 1/2 cups grated cheese.
- Pour frozen hash browns into microwave safe bowl and cook on high for about 4 minutes or until slightly thawed. Add to bowl with sausage and peppers.
- In separate bowl, whisk eggs, half and half, salt and pepper. Pour into bowl with sausage, pepper and hash brown mixture.
- Pour into a 9 x 13 baking dish and bake for about 40-50 minutes, checking after 30 minutes. If set in the middle and slightly brown the casserole is done.
- Top with additional half cup of grated cheese, chopped avocado and sliced green onion.
- Left overs are great when tucked inside a warm tortilla!

Hi Cayla! I have not tried this particular recipe the day before but I can assume it would be just fine. Maybe consider getting all the ingredients together in the bowl and pouring the eggs and cream over the day of cooking to be safe?

I make this a lot! My granddaughters request this every time they come to visit. I like that the leftovers freeze so well, perfect to send home with my mom. That is, if there is any left!

I love this. I had actually thrown together a bunch of ingredients and was looking on internet after I put it in the oven to see if it would actually come together. I added heavy whipping cream french onion dip pork sausage onions red and green peppers and a few seasonings on top of some frozen French fries (didnt know I was out of tatertotts) and so far so good. I have the oven on 380 and my house smells wonderful. And i topped it with Colby cheese. Cant wait. Love looking at all the recipes you provide. Thanks!!

Delicious breakfast casserole that was a total hit with kids and adults alike! And it was incredibly easy to make. I prepared it all the night before and popped it into the oven 40 minutes before our guests arrived. I made this Breakfast Casserole over the weekend and it was amazing! I actually forgot to add the shredded cheese and it was still amazing. My husband and share a desire for a delicious breakfast casserole but hadn’t found one we loved…until now. I made it as a breakfast prep for the work-week but we ended up eating on it for meals all weekend. I can’t wait to make it again!
