This easy & cheesy chicken meatball skillet is great for a weeknight meal.
It’s also fabulous for appetizers. Serve with some sourdough and let your guests dip and scoop their way to gooey numyness!
**If you really want to go the extra mile, here’s our cheesy stuffed garlic French bread! It is literally THE BEST tasting garlic bread on the planet. People will kiss you if you make this, so just be warned if you’re the Howie-Mandel-No-Touchy type!
One of my favorite meatball trade secrets is using chicken sausage (the kind in the tube roll); It already has all the spices in it! And because it’s chicken, it doesn’t feel like such a gut bomb.
If you don’t want to use chicken sausage, you could certainly use beef, but keep in mind you’ll want to add salt, pepper, and Italian seasonings if using beef alone. (the chicken sausage already has all that all in it)!

Easy and Cheesy Chicken Meatball Skillet
Ingredients
- 16 ounces chicken sausage
- 1/2 cup chopped onion
- 1/2 cup breadcrumbs
- 1 24 oz jar of marinara *My favorite is Trader Joe's Three Cheese Pomodoro Sauce
- 1/2 cup shredded cheese *I used cheddar, but parmesan would be ideal!
Instructions
- Preheat oven to 400 degrees .
- In a small bowl, combine chicken sausage, chopped onion, and breadcrumbs. Mix well, ensuring you don't have dry 'blobs' of bread crumbs. Set aside.
- Using a 9 inch skillet, pour the entire jar of marinara into your pan.
- Forming roughly 2 square inch meatballs with meat mixture, place meatballs directly into sauce. Cover pan with foil, and bake for 15 minutes.
- Remove pan from oven, sprinkle with cheese, cover with foil, and place back into oven for 5 minutes. Serve with crusty bread and enjoy!
