Lofthouse Cookie Bars! – Super soft cream cheese cookie topped with tons of peppermint flavored buttery frosting!
Have you ever had those big soft cookies with the pink frosting? Thats what these are only in bar form!
Cream cheese in the cookie dough is the secret to this melt in your mouth bars! I added a touch of peppermint flavor to the frosting but if that isn’t your thing…delete! Or try some almond or vanilla extract.
I’ll admit I tried to cheat on the frosting…imagine that? Me…trying to take the lazy way out. Say it isn’t so!
I tried a jar of store bought cream cheese frosting, but it just won’t work for this recipe. You don’t get the thick consistency which is a Lofthouse cookie trademark. So your gonna have dirty another bowl for these…sorry, I tried :).

Lofthouse Sugar Cookie Bars
Ingredients
- 1 cup butter, softened
- 8 ounces cream cheese
- 1 1/2 cups granulated white sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Frosting
- 3/4 cup butter, room temperature
- 3 cups powdered sugar
- 1 teaspoon peppermint extract optional
- 4 tablespoons heavy cream
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 cake pan with non-stick spray.
- Beat together butter and cream cheese until well blended.
- Mix in sugar, egg and vanilla.
- Add flour, baking soda and baking powder. Mix well.
- Spread dough into prepared pan and bake for about 20 minutes.
Frosting
- Using a mixer beat the butter until smooth. Add one cup of powdered sugar along with one tablespoon of the half and half. Alternate until it forms a thick frosting. Mix in extract.
- Frost cooled bars and top with crushed peppermint candy!
