Pineapple Fried Rice

This Easy Pineapple Fried Rice will become a regular request!  Tender rice, sweet pineapple and clean out the fridge vegetables!   Everything in the pot!

Use any protein!  For this version we used up some leftover ham along with all the veggies we could find!

A simple sauce of soy and sesame oil brings this one pot dish to life!

Ingredients for Pineapple Fried Rice –

  • Cooked Rice – white, brown, short or long grain.  Day old works best if you have it.  Try our Oven Baked White Rice.  You’ll never use the stove top again!
  • Protein – chopped ham, shrimp, chicken, pork or even ground meat can be used. (we used ham in this version)
  • Veggies – all the veggies!  We used carrots, bell pepper, onion and peas.
  • Pineapple – canned, frozen (thawed) or fresh cut into bite sized pieces.
  • Sauce – we kept this simple.  Soy sauce, sesame oil and a bit fish sauce if you have it.
  • Eggs – whisked and cooked right in the same pan.

What kind of rice is best to use for fried rice –

  • this is a very versatile and forgiving recipe.   Most any rice will do.  White, brown, short or long grain.
  • cooked day old rice works best as it is dry and will cook up well in the skillet.  However if you don’t have this available cooked cooled rice will work in a pinch.
  • use our fool proof OVEN BAKED RICE method for the easiest rice

 Lets get started!

Saute the diced veggies and ham until the veggies are tender and the ham is slightly brown.

Add the cooked rice to the veggies and ham mixture.

Mix up the easy sauce and pour over the rice.

Heat through and toss in the peas and pineapple.

Now push everything to the side of the pan.  Melt a tablespoon of butter and pour in the eggs.  Everything in one pan…we love that!

After scramble cooking the eggs, gently fold into the rice mixture.

Don’t forget to taste for seasoning!  More soy?  Sesame oil or salt?

Additions and substitutions for the perfect Pineapple Fried rice:

  • Open up the fridge and see what ya got!
    • celery
    • cabbage
    • water chestnuts (really adds a  nice crunch)
    • beans
    • leeks
    • zucchini
    • broccoli
    • mushrooms
    • Proteins – leftover steak, chicken, shrimp and ground meat all work great with this recipe!

How to serve and store Pineapple Fried Rice

  • store in the refrigerator for up to 3 days.  Freeze in freezer bags or freezer container for up to 3 months.
  • serve this with or without anything!  We like it straight up in a bowl but it also works great as a side dish to chicken or fish.

Pineapple Fried Rice

This quick and easy Pineapple Fried Rice recipe takes minutes to prepare. Use left over ham, chicken, beef and all the veggies you have!

Ingredients

  • 2 tablespoons olive oil
  • 2 cups diced ham - steak, chicken or pork
  • 1 cup diced carrots
  • 1 cup diced red bell pepper
  • 1/2 cup diced white onion
  • 3 cups cooked cooled white rice
  • 1 cup frozen peas - thawed
  • 1 cup pineapple chunks - canned, fresh or frozen
  • 1 tablespoon butter
  • 3 large eggs - beaten
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons fish sauce (optional but adds unami).
  • 1/3 cup diced green onion
  • salt and pepper to taste

Instructions

  • Heat a large skillet on medium high heat. Add olive oil. Stir fry diced carrots, bell pepper, white onion and ham until veggies are tender and ham is slightly browned.
  • Add cooked cooled rice to skillet and stir.
  • Combine soy sauce, sesame oil and fish sauce (if using) in a small bowl. Pour sauce over rice mixture. Continue to cook and stir until sauce has been incorporated and just a small amount of liquid is visable.
  • Add pineapple chunks and peas. Heat through.
  • Push the rice mixture to the side of the skillet. Melt 2 tablespoons of butter in the pan. Pour eggs into pan. Scramble and cook. Gently fold cooked eggs into rice mixture.
  • Garnish with sliced green onions and serve!
