Yogurt Cake

Easy and fresh Yogurt Cake – a simple recipe that comes together in one bowl.  Plain yogurt, canola oil, eggs, flour and sugar are the staple ingredients.  When combined they make a lovely cake thats perfect when topped with berries or fruit and a sprinkle of turbinado sugar.  We love cake!

Yogurt Cake

Similar in texture to our Strawberry Cake or a pound cake this not too sweet and a little tart cake is the perfect snack!  We baked the fruit right into the top of the cake but a simple dusting of confectioners sugar would do the trick as well.

PRO TIP – We thought the addition of the Turbinado sugar (Sugar in the Raw) sprinkled on top really made this cake special!

Ingredients for Yogurt Cake –

  • plain yogurt – Either plain or Greek style yogurt can be used.  Full fat is recommended for the richest flavor but we have had success with low fat and  non fat.
  • vegetable or canola oil – olive oil can be used and will add a bit more savory flavor.
  • eggs
  • sugar
  • all purpose flour
  • baking powder 
  • salt
  • blueberries and nectarines – or any berry or chopped fruit.  You can also just leave plain.
  • turbinado sugar – if you don’t have this in the pantry plain white sugar will do

We whipped up the simple batter without an electric mixer.  One less gadget to clean.  After pouring the batter in an 8 x 8 pan we topped with chopped nectarines and blueberries.

NOTE:  You can also use a 9 x 5 loaf pan or even a pie plate.  This will easily double to make a 9 x 13 cake.

Easy Additions for Yogurt Cake –

  • Almond, Orange or Lemon Extract – will give an extra boost of flavor.
  • Any kind of berry or fruit – raspberries, peaches, strawberries.  Chopped apple or even banana.
  • Nuts – such as chopped pecans or walnuts.
  • Top with whipped cream or ice cream

Equipment

Ingredients

  • 2 large eggs
  • 1 cup white sugar
  • 1/2 cup canola oil - or vegetable oil
  • 1 cup plain yogurt - regular or greek style. Full fat for best flavor but low fat or non fat will work.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 medium nectarine - chopped
  • 1/2 cup blueberries
  • 1/4 cup Turbinado sugar

Instructions

  • Preheat oven to 350 degrees. Spray an 8 x 8 baking pan with non stick spray.
  • In a medium size bowl combine sugar and eggs, beating until light and fluffy.
  • Stir in oil, yogurt and vanilla extract.
  • Add the flour, baking powder and salt. Stir until just combined being careful to not over mix.
  • Top with fresh fruit and sprinkle with Turbinado sugar.
  • Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes before cutting.

Notes

Store at room temperature for 2 days and refrigerate for additional two days.  Freeze for up to 3 months.
Substitute a 9 x 5 loaf pan or even a pie plate.  Double the recipe for a 9 x 13 cake.
