Breakfast Sliders on Hawaiian Rolls

These easy breakfast sliders come together super quickly! Our readers love our slider recipes so much, we had to try this sheet pan technique with a breakfast version, and it does not disappoint. To make these breakfast sliders on Hawaiian rolls, simply bake some scrambled eggs, some breakfast sausage, and place them on a package of rolls.  Slice and serve! It’s such a simple way to make 12 breakfast sliders all at once. Meal prep, feeding a crowd, freezing them, they work for all it all.

Breakfast Slider Recipe

The best part about this recipe is it comes together in about 3 easy steps. To make this recipe as simple as possible, we bake each layer on a sheet pan. Sausage, egg, and then put them on Hawaiian rolls. I absolutely love this technique for sliders. I use it in my other favorite slider recipe here.

Once everything is done, add some cheese, slice and serve. All of the sudden, you have 12 sliders sliced in only about 20 minutes! 

Tips for Baked Breakfast Sliders

  • Use a half sheet pan lined with parchment paper. Parchment paper works great because it is naturally nonstick. 
  • If you have 2 sheet pans, bake them simultaneously!
  • If you like cheese on your eggs, add about 1/2 to 1 cup of shredded cheese just before the eggs are done baking. If you add it too early, it doesn’t retain that melty, gooey finish.

Easy Make Ahead Breakfast Sliders

There are a lot of breakfast slider recipes out there. I did not see many that were baked this way! What I love about this is how easy they are to assemble. Bake the sausage, bake the eggs, and assemble. I brushed the tops with some melted butter and added some dried chives for a little added color and flavor. 

A few tips for making breakfast oven sliders: 

  • You’ll notice my sausage may look a little different. I used lean ground turkey sausage. It has hardly any fat, so when it’s baked on a sheet pan, it may not look as pretty as other sausages when they’re cooked into patties or grounds. It still tastes great.
    • If you want to stick with turkey sausage, you can always make your own using this recipe. It works with ground chicken, too.
  • You can use any sausage type you like. I will say regular pork sausage is probably more delicious, but I have no gallbladder, so I try to stick with low fat sausage like turkey.
    • If you want your breakfast sliders to be extra meaty, or have more protein, you could use 2 lbs of pork sausage.
  • You could also make this recipe with egg whites.

Easy Breakfast Recipes For a Crowd

This is such a great recipe for feeding a crowd, like on Easter, Christmas Morning, Mother’s Day, or even a sports weekend. They also work great for meal prep in the morning, when you’re low on time. Just grab a slider (or three) and go!

Variations & Storage Instructions

This is a super easy recipe to modify. Think of it more like a method, and custom it to your liking. 

  • You can use egg whites just as easily. 
  • Want to add some veggies? Add chopped spinach, bell pepper, onions, etc. You can add these right to the egg mixture so they cook as they bake. Note that this will increase the cooking time by about 5-8 minutes.
  • If you like spicy, use chorizo, or spicy Italian sausage. Yum!
  • Leftover Sliders: To store these, you can wrap them up in foil on a sheet pan, or individually.
    • Microwave: Reheat them in the microwave, wrapped in a paper towel, and microwave for about 15-20 seconds at a time, until fully heated.
    • Oven: Wrap the sliders in foil, and and bake at 300 degrees for about 20 minutes. At about the 10 minute mark, uncover the tops of the sliders to get them golden brown.

Easy Sheet Pan Breakfast Sliders

Ingredients

  • 1 package Hawaiian Rolls (12 to a pack)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 7 eggs
  • 1/4 cup milk
  • 1 lb ground breakfast sausage
  • 1/2 cup shredded cheese
  • 1 tbsp melted butter

Instructions

  • Preheat oven to 350 degrees fahrenheit. Line 2 half sheet pans with parchment paper.
    Note: (If you only have 1 half sheet pan you can bake the eggs and turkey sausage separately).
  • In a bowl, whisk together eggs and milk. Pour onto 1 parchment lined half sheet pan. Bake for about 15 minutes, or until eggs are fully set. At about the 10 minute mark, add the cheese on top of the almost cooked eggs.
  • On another parchment lined sheet pan, press the ground turkey into the parchment so it mostly fills out the pan. Bake for about 15 minutes, or until sausage is cooked throughout.
    *Note, you can cook eggs and sausage simultaneously if you have 2 pans.
  • While eggs and sausage are baking, slice Hawaiian rolls horizontally, so they are still connected, with 12 tops, and 12 bottoms.
  • When eggs & turkey sausage are fully cooked, allow them to slightly cool before handling. Transfer sheet of eggs to Hawaiian rolls, followed by sausage. Brush tops of sliders with melted butter.
  • Slice, serve and enjoy.
