Chinese Chicken Salad with crispy crunchy wonton strips along with cabbage, peppers, carrots, mandarin oranges and a two minute Asian Sesame Dressing!

We have made two batches of this Easy Chinese Chicken Salad…which equates to 4 days of salad nirvana! Â Crunchy Napa Cabbage and Crispy Won Tons make for a crunch fest!
Ingredients for Chinese Chicken Salad –
Salad –Â
- Napa cabbage (or regular cabbage)
- Romaine or Iceberg lettuce
- cooked chicken – rotisserie works great!
- Red Bell Pepper
- Carrots
- Cooked chicken
- Mandarin Oranges
- green onion
- 1/4 cup sliced almonds
Dressing and Wonton crisps
- Soy sauce
- Vinegar
- Canola oil (or extra light olive oil)
- Honey
- Sesame oil
- Ground ginger
- Peanut butter (optional)
- Won Ton Wrappers
- toasted sesame seeds for garnish
How to make crispy wontons –
- simply heat 2 tablespoons light oil like canola, vegetable oil or extra light olive oil, Â in a large skillet until shimmering.
- slice the wonton wrappers in strips and sprinkle in the hot oil.
- fry for about 1 minute on each side and place on a paper towel to drain.
NOTE: Â You can also purchase wonton salad toppers by the croutons in your store or substitute chow mein noodles. Â But we do love th extra special flavor cooking our own give.
How to make Easy Asian Dressing –
We kept the ingredient simple and fresh without having to buy any Asian specialty items!
- Add all the ingredients to a jar and shake! Â Thats it!
- Peanut Butter? – yes! Â just a tablespoon adds a wonderful complex flavor to the dressing!
- NOTE: Remember you will not use all the dressing. Â Drizzle on just enough for your taste and save the rest.
Chop all the veggies!
What else can I toss in this salad –
- sub cooked shrimp for chicken
- toss in bean sprouts, cucumber, chopped broccoli, snap peas and water chestnuts just to name a few!
- clean out your fridge with this salad!
What can I serve with this Chinese Chicken Salad –
- omit the proten and serve as a side to grilled chicken or baked salmon. Â This makes a great side dish!
- bread of course! Â Try our Homemade Breadsticks, Quick Cheesy Bread or Focaccia !

Chinese Chicken Salad
Ingredients
Salad Ingredients
- 2 cups cooked chicken - diced
- 4 cups Napa Cabbage - thinly sliced
- 3 cups Romaine or Iceberg Lettuce - thinly sliced
- 1 large red bell pepper - thinly sliced
- 1 cup carrots - julienned
- 1 11 ounce can mandarin oranges - drained
- 1/3 cup green onions - sliced
- 1 tablespoon toasted sesame seeds
- 1/4 cup sliced almonds
- 1 cup crispy wonton strips - see instructions below for preparation
For Asian Dressing
- 1/4 cup oil - canola, vegetable or extra light olive oil
- 1/4 cup rice vinegar - you can substitite white vinegar but increase the honey to 3 tablespoons
- 2 tablespoons honey
- 3 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1/2 teaspoon dried ginger
- 1 tablespoon creamy peanut butter - optional
Instructions
To make crispy wonton strips
- Cut wonton wrappers in 1/4 inch strips. Heat two tablespoons canola oil to large skillet until shimmering and hot.
- Quickly fry wontons in hot oil About a minute on each side. Drain on paper towels. Set aside.
To make Asian Dressing
- Combine all ingredients in jar and shake! Store in refrigerator while prepping the salad.
To make salad
- Add chopped cabbage, lettuce, carrots, bell peppers, oranges, chicken and green onions to large salad bowl and toss.
- Drizzle on desired amount of dressing. Sprinkle on the crispy wontons and sesame seeds. NOTE: only dress as much salad as needed and store the rest.
- Store any undressed leftovers in the refrigerator for up to 3 days tossing on dressing as needed.
