We love our one pan, skillet meals around here and this Easy Sausage and Potato Skillet is no exception! Made in about 20 minutes, we combine sausage, potatoes, bell peppers and onions in a pan, saute them to perfection, and enjoy this easy meal in no time.
To start, combine butter and olive oil in a pan. Then once bubbly, add potatoes and sausage to the skillet. I like my potatoes and sausage to have a nice crust on them and I find that a cast iron skillet does the trick just right. Add some salt and pepper, and continue to stir.
After sauteeting the potatoes sand sausage for about 5-7 minutes, OR until they reach your desired level of ‘doneness’, add in chopped onions and peppers.
I find that I adding in the peppers and onions at the last bit helps to keep things tasting super fresh. It doesn’t cook the onions long enough to caramelize them, but it does give them enough time to cook without getting overly soft.
I like to top this easy sausage and peppers skillet meal with avocado and parsley, but there are SO many combinations that would be delicious with this!
Other ways to enjoy this Skillet Sausage and Potato meal:
- Turn it into breakfast! If using an oven safe skillet, add eggs and bake at 350 for about 15-20 minutes, or until eggs are fully cooked to your liking.
- Turn this into a creole dish! Add shrimp (tail off and deveined is preferable) and chunks of corn on the cob. Season with Old Bay. Once shrimp is pink and fully cooked through, enjoy!
- Add more vegetables. If you prefer them with a char, add them in the beginning with the sausage and peppers. I recommend brussel sprouts, green beans, broccoli, zucchini, or corn.
- Add in fresh herbs along with the potatoes and sausage at the beginning; Rosemary, thyme, garlic, or sage would be aromatic and wonderful.
- We use Aidells Chicken Apple Sausage, but any sausage would work. If you enjoy spicy, you could use Chorizo.

Easy Sausage and Potato Skillet
Ingredients
- 1 lb baby yukon potatoes (chopped)
- 2 cups sliced sausage (Equivalent to about 1 lb. Flavor/brand of your choice, we used Aidells Chicken Apple Sausage)
- 1 medium onion (chopped, equivalent to about 3/4 cup)
- 1 large red bell pepper (chopped, equivalent to about 3/4 cup)
- 1 tbsp butter
- 1 tbsp olive oil
- salt and pepper to taste
- 1 tbsp fresh chopped parsley (optional, for garnish)
- 1 whole avocado (optional, sliced for garnish)
Instructions
- Heat a skillet (we prefer cast iron) on medium high heat. Add butter and olive oil. Heat until bubbly.
- Add sausage and potatoes. Continue to cook, stirring often, until sausage and potatoes develop brown crust. Add salt and pepper to your liking.
- Once sausage and peppers have desired amount of 'crust', add peppers and onions. Saute until onions are semi translucent, about 5-7 minutes.
- Garnish with parlsey and avocado if desired. Enjoy!
