I needed a good Mother’s Day cocktail; Something classic, but still fun…These Frozen Mimosa’s do the trick! 3 ingredients, a freezer, and you’re good to go. What else could you want in a cocktail? Well, more alcohol…but we can work that in.
I made this recipe up; It was warm, I was bored, and I have a stockpile of prosecco that would blow your friggin’ socks off. The key to Frozen Mimosa’s are the frozen orange juice- but really make sure that you stir it when it’s in the freezer every 45 minutes- it makes a huge difference in the consistency, otherwise you’re going to end up with a block of frozen orange juice. No bueno.
Freshly squeezed OJ is the way to go- but if you’re short on time, just use store bought. No big. Do add some orange zest if you’re going to do that- it will make the flavor of your mimosa pop!
Pour into a shallow dish- mine is about 2 inches deep and 11 inches wide. Put into the freezer. Stir with a fork every 45 minutes, making sure to scrape the sides, until frozen and fluffy!
Remove from the fridge once fully frozen and fluff again with a fork. If it’s very frozen, let it sit for 20 minutes and then fluff. I spooned mine into a mason jar to serve for the cute effect, and garnished with a grapefruit wedge. Top with prosecco and you have a mimosa! My favorite prosecco is Lamarca- It’s crisp, delicious, and not overly sweet. Alaska Airlines recently started serving it and I loooove to get my happy on while in flight!
Add your frozen mixture to the glass of your choice– I bought these cute stemless flutes from Target- and pour your prosecco over it. It will melt the frozen OJ a bit, just add some more frozen OJ to the top, and garnish with a wedge of something! I chose grapefruit, but adding some chopped up strawberries or raspberries would be fab as well. Oh! And paper straws- those are so cute, too!

Frozen Mimosas
Ingredients
- 5 cups freshly squeezed orange juice Store bought is fine too.
- 1/2 cup honey Omit if using overly sweet store-bought orange juice
- 1 750 ml Prosecco Lamarca is my favorite!
Instructions
- In a small bowl, combine orange juice and honey. Whisk well, ensuring honey does not stick to bottom.
- Immediately after whisking so honey does not settle, pour OJ+honey mixture into a shallow dish. The thinner the OJ mixture is spread, the quicker it will freeze!
- Stir with a fork every 45 minutes, making sure to carefully scrape the sides of the dish to prevent rock hard freezing. Keep forking it (ha!) until frozen, almost to a slurpee like consistency.
- Spoon frozen OJ mixture into single serve glass, and top with prosecco. Repeat for each guest. Garnish with fruit and serve immediately.
