Ahh, bran muffins. We will call them ‘B.M.’s for short because clearly I think I am hilarious, and after all- this is the Laughing Spatula. They are delicious, and healthy, and do alot of good for your insides. This recipe is easy, and healthier than most as it uses applesauce instead of oil. So, enjoy a good ole’, hearty ‘B.M’…Bran Muffin!
The first step is to purchase Bran Wheat.
I purchase mine at Sprouts in the bulk section, but you can usually find it at any grocery store near the flour. Mix the bran with buttermilk and mix it well. It will form a crumbly texture.
After that, we add in egg, brown sugar, vanilla extract and mix again. Finally, we add in flour, cinnamon, baking soda, baking powder, and salt. Mix it again until a nice batter forms.
I like to use a cookie scoop for any muffins or cupcakes I make, including these bran muffins– it keeps the mess down and ensures that they all bake evenly (plus, look how clean it looks! It makes me feel like I am on a cooking show!). You can bake these bran muffins in muffin liners, or, you can simply spray a muffin tin with nonstick spray, whichever you prefer.
Bake them at 375 for about 15 minutes, or until a toothpick inserted into the center comes out clean, and there you go! Bran muffins are such an easy and healthy breakfast….I like them with a smidge of butte.r

Bran Muffins
Ingredients
- 1.5 cups bran wheat
- 1 cup buttermilk (substitute 1 cup milk with 1 tbsp vinegar if you don't have buttermilk on hand)
- 1/3 cup unsweetened applesauce
- 1 egg
- 2/3 cup brown sugar
- 1 tbsp cinnamon
- 1 tbsp vanilla extract
- 1 cup all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- .5 tsp salt
Instructions
- Preheat oven to 375 degrees farenheit. Prepare a muffin tin with muffin liners (or simply spray muffin tin with nonstick spray if not using muffin liners).
- In a standmixer or bowl with handheld mixer, mix bran wheat and buttermilk.
- Add applesauce, egg, brown sugar, vanilla extract and cinnamon. Mix to combine. Add flour, baking soda, baking powder, and salt.
- Divide batter into 12 muffins (a cookie scoop as shown is recommended). Bake for 15 minutes, or until a toothpick inserted into the center of the muffin comes out clean.

Just baked these muffins tonight and they are really yummy! I will definitely be making them again. I did have to bake them a bit longer than 15 minutes though.
