This Lemon Grilled Chicken seriously hits the spot. It’s healthy, bright, easy, and a fool proof crowd pleaser. You only need a few ingredients- lemons, limes, garlic, olive oil, a few spices- marinate, and grill, and call it good!

Lemon Grilled Chicken

I’m not much of a griller- It’s hot, smoky, and sweat tends to ruin my freshly applied spray tan– so I make my husband do the dirty work. He took the liberty of making this for dinner for us on a warm April night.

Citrus Grilled Chicken in Marinade

This marinade is a simple combination of freshly squeezed lemons, a lime, fresh garlic, salt, pepper, and a little dash of red pepper flakes if you like some spice (but leave it out if you don’t). I should mention that this is a marinade you shouldn’t ‘marinate’ for too long- the lemon will make the chicken kind of soggy if you do. I’d say a max of about 2 hours tops. That’s also the beauty of this lemon grilled chicken though- you don’t have to marinate forever! Easy for a perfect weeknight summer meal.

Check out those perfect grill marks…Mr. Spatula did a good job on our lemon grilled chicken! Was pretty proud of my action shot. Maybe I’ll go into stunt photography. Nope…probably won’t, that would really ruin my spray tan and I can barely walk to the fridge without getting winded. I will say…This picture doesn’t show the full flavor of the chicken very well- but TRUST ME- it’s got loads of flavor, and just says ‘SUMMER’ when you bite into it- taking pics of a live flame and chicken breast ain’t as easy as it sounds!

Lemon Grilled Chicken Ready to Serve!

Look at that- juicy, lemon grilled chicken perfection! To go WITH your Grilled Lemon Chicken, I’d suggest Crunchy Mediterranean Couscous salad. It’s got veggies, it’s got your starch (couscous), and it’s got loads of flavor for the whole family. Pairing it with your Lemon Grilled Chicken will make for the most DELICIOUS Summer meal for the whole family!

For a couple other fabulous Summer recipes- I’d suggest our 20 Minute One Pan Shrimp and Orzo Dinner– it’s got garlic, shrimp, some lemon, and orzo- what’s not to love? If you really want something easy– Sheet Pan Chili Lime Shrimp Fajitas is the ticket. Zesty, easy, and leaves your kitchen clean. Winner!

An easy, zesty grilled chicken recipe with a quick marinade and loads of flavor. Perfect for Summer!

Course: Dinner, lunch
Cuisine: American, Summer
Servings: 4 people

Ingredients
  • 4 chicken breasts I used boneless and skinless
Marinade
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp lime juice
  • 2 tbsp fresh minced garlic
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp crushed red pepper flakes Optional-
Instructions
  1. Combine marinade ingredients into bowl. Stir well. 

  2. Score chicken breasts horizontally and vertically to create a cross pattern. 

  3. Add chicken breasts to marinade, and let sit covered in fridge for at least 20 minutes, but not more than 2 hours. (If the chicken sits for longer than 2 hours with the citrus juice it gets soggy.)

  4. Grill on medium heat for about 20 minutes or until chicken reaches an internal temperature of 165 degrees farenheit. 

  5. Serve & enjoy!

    Hi this sounds great but you didn’t clarify whether the chicken breasts are boneless skinless ?
