Shrimp and Grits Casserole

This Shrimp and Grits Casserole is everything you love in this southern comfort dish only in casserole form!

Shrimp and Grits Casserole

We love cheesy grits, but we don’t always enjoy standing at the stove, stirring or the splattering mess they make.  We have found that quick cooking grits are a great substitute!  Smaller ground, precooked and dried they cook up in just a few minutes with the same great results!

Ingredients for Shrimp and Grits Casserole

  • shrimp – raw medium size.  Fresh or frozen thawed.
  • quick cooking grits – usually found by the regular grits.  Sometimes called 5 minute grits
  • cheese – big flavored cheese like parmesan, cheddar or asiago or a mixture of all three!
  • milk, cream or half and half
  • butter
  • chicken broth
  • red bell pepper
  • onion
  • hot sauce

Use a deep skillet that goes from stove top to oven or just cook it up in a skillet and pour into a casserole dish! Either method works.

Start by giving diced pepper and onion a quick saute.

Add the milk and chicken broth.  Bring to a simmer and pour in the grits!

Let that simmer while constantly stirring with a whisk for about 5 minutes.

Remove from the heat and stir in the shrimp, cheese, hot sauce .  Top with a bit more cheese and bake for about 20 minutes!

What else could I toss into this Shrimp and Grits Casserole

  • saute up some diced andouille sausage with the pepper and onion
  • diced celery and carrots are a great way to sneak in more veggies
  • add some more heat with diced jalapeños

Serve this up with a simple salad or steamed veggies on the side and you have a perfect and easy dinner!

Ingredients

  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1 cup heavy cream or half and half
  • 2 cups chicken stock
  • 1 cup quick cooking grits
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1 large egg - slightly beaten
  • 1 pound medium size shrimp - peeled and devined
  • 2 teaspoons hot sauce
  • 2 cups shredded sharp cheddar

Instructions

  • Preheat oven to 375 degrees. ( Use a large deep oven safe skillet or dutch oven or pour contents when prepared into a 8 x 8 casserole.)
  • Saute onion and red pepper in olive oil until soft. Add cream and chicken stock. Bring to a simmer. Add grits and salt stirring constantly with a whisk until thick and creamy. About 5 minutes. Remove from heat.
  • Add butter, egg, shrimp and hot sauce and stir well.
  • Bake for 25 minutes until bubbly on the edges and shrimp is cooked through.
