What happens when you take 2 delicious steamed foods and combine them with white wine, garlic & lemon? Steamed Artichokes with Clams! Dunk in butter, and serve on the patio for an easy Summer snack everybody loves to enjoy around a table.

Ingredients for Steamed Artichokes & Clams:
This is a super simple recipe with big flavor, which we love!
- Ocean Mist Farms Artichokes
- Littleneck Clams
- Manila clams also work great.
- Salted Butter
- If you only have unsalted, simply add 1/4 tsp of salt to broth.
- Garlic
- White Wine
- We like a dry wine, like a chardonnay.
- Fresh Herbs
- For garnish & flavor.
How to make Steamed Artichokes and Clams
Start with cleaning and preparing the artichokes.
- Cut artichoke stem, leaving about 1 1/2 inches. Remove excess exterior leaves.
- Remove top of artichoke, and trim remaining leaves.
- Cut artichoke into half. Remove choke. Rub with lemon to prevent oxidizing.
- Cut each half again, yielding 4 artichoke quartered pieces.
Prepare Artichoke Steam Broth
- In large pot or dutch oven add three tablespoons butter.
- Saute garlic for 2-3 minutes. Add juice of 1 lemon.
- Add one cup of dry white wine and two cups of water. Bring to a simmer.
- Place artichokes in water cut side down to help keep them from browning.
You can also add in more flavors; herbs, dijon mustard, onion, and shallots are a view ideas.
Steam Artichokes & Clams
- Cover and steam artichokes for 20 minutes or until slightly soft (they will continue to cook with the clams).
- While the artichokes steam scrub clams clean.
- When artichokes are slightly tender add clams to pot and cover.
- Steam about 7-8 minutes or until opened. Toss any unopened clams.
- Add fresh herbs tossed on top if desired. We like parsley and thyme, rosemary would be great as well.
If you have never cooked with clams before, it may seem daunting- but they are actually quite easy to work with! Remember that a bad clam is a closed clam, so if after steaming you notice any clams have not opened, avoid eating them. Serving Artichokes & Clams
You can serve this dish. couple ways. We like both but if you plan on a length stay at the table or dinner party, leave them in the pot with broth. So yummy and it will stay warm longer.
1) On a platter with melted butter.
2) Right in the pot. If serving right in the pot, we recommend adding crusty sourdough bread on the side for your guests to dunk in the broth. It’s SO good and flavorful!

- 1 cup dry white wine (like Chardonnay)
- 1.5 lbs little neck clams (cleaned)
Instructions
- Prepare artichoke. Cut artichoke stem, leaving about 1 1/2 inches. Remove excess exterior leaves
- Remove top of artichoke, and trim remaining leaves. Cut artichoke into half. Remove choke. Rub with halved lemon to prevent oxidizing.
- Cut each half again, yielding 4 artichoke quartered pieces. Rub with lemon again. Set aside.
- In a medium sized pot (or dutch oven) on medium high heat, melt butter.
- Add garlic, and sauté for about 2 minutes or just until soft. Add lemon juice. Add one cup of dry white wine and two cups of water. Bring to a simmer.
- Place artichokes in water cut side down to help keep them from browning.
- Cover and steam artichokes for 20 minutes or until slightly soft (they will continue to cook with the clams).
- When artichokes are slightly tender add clams to pot and cover.
- Steam about 10 minutes or until clams are opened. Toss any unopened clams.
- Toss fresh herbs on top and serve as desired.
