3 Minute Lemon Dijon Vinaigrette – This easy to make big flavored dressing will become your favorite! It looks and tastes like it has cream or mayo added, but it doesn’t! It’s a true vinaigrette!
How does this 3 Minute Lemon Dijon Vinaigrette
taste so creamy with no cream or mayo?
A little thing called emulsification. Dijon is a natural emulsifier and when it get whizzed up in a blender it makes this dressing all creamy and stuff. I love creamy and stuff!
With just a few simple ingredients, lemon, vinegar, light olive oil and dijon mustard, you can whip this up in a quick 3 minutes!
I used my handy dandy Nutri Bullet. I love this gadget and I am not a gadget girl. You can use a blender, immersion blender or food processor and get great results as well. You can also use just a hand whisk as well, just mince the garlic before adding.
Add all your ingredients to the blender, whiz boom for 30 seconds and you have a creamy, healthy and super tasty dressing!
It goes with most any kind of salad and doubles
as a really good marinade for chicken or fish!
I love to use these Condiment Squeeze Bottles for perfect dressing distribution! I actually use these for a ton of stuff from olive oil to dishwashing detergent. I should do a whole post on 101 squeeze bottle uses! Oh and soy sauce…love them for soy sauce!
Play with your food! You can adjust this basic recipes a hundred different ways. Omit the parsley, increase the garlic, add your favorite herb. Tarragon would be great with this!
Tips to make 3 Minute Lemon Dijon Vinaigrette
- A blender or immersion blender works best to get this emulsified so it’s super creamy.
- I used apple cider vinegar as I like the kick it gives but you can sub your fave vinegar.
- We like extra light olive oil. It is my favorite for salad dressings but you can use what you have on hand. Even a light vegetable oil or canola will work.
Check out this video- It really shows how creamy and delicious this Lemon Dijon dressing is!

Very tasty and easy. I added dried basil. I omitted adding salt because mustard already has salt.

This lemon Dijon vinaigrette was delicious. I served it last night for a dinner at our home. It got rave reviews, especially from the 1 vegan at the dinner. I had a dressing like this on a breakfast salad last week and it was delicious but a little less pungent flavor than this recipe, so I added a little bit of honey (1.5 tsp) to this recipe.
I will definitely make this again. Thank you for your recipe!

Oh man, this is FANTASTIC!!! I had cilantro in the garden, worked fantastic. I will try subbing lime juice for lemon next time I do Mexican supper 💯
Jess says
I used half the oil because I like my dressing tart, used garlic powder instead of fresh, and shook mine in a mason jar. Delicious and easy, definitely making again!!!

I cheat with garlic powder sometimes too! It works! So glad you loved it. Thanks for the nice note :).

This is so good that I made it two weeks in a row. Especially tasty in a spinach salad with chicken and yellow pepper. I saved this recipe to use even after I’m done with Whole30. Thank you!

I made this but it turned out way creamier than yours. How can I thin it out?
Kathi & Rachel says
Little more lemon, vinegar or olive oil will work. Just whisk it in rather than use the blender.

Made this today and it was yummy! Turned out a tad tangy so I added a drizzle of honey. Perfection! Thanks for the recipe. 🙂

Do you refrigerate this? I do but the oil keeps solidifying and I need to let it sit out to thaw for about a half hour before I can use it.
LaughingSpatula.com says
Store in the refrigerator. If it gets a little solid after a few days you can set it on the counter for about 15 minutes or microwave on high for 5-10 seconds.

So glad I tried this. Came together in no time flat. I only used half a cup of oil. That made it a little thicker but I like my dressings more on the vinegary side. Even used it as a dip with some carrots and celery as an app.

This looks great! Does anyone know of any Dijon Mustard brands that do not have sugar? Our GP does
Trisha says
Google “whole grain mustard with no added sugar” and several pop up. Here in TX, I use HEB Organics Whole Grain Mustard with no sugar added. It’s vinegar, mustard seed and sea salt.

Thank you! I’ll check that out if I can’t find locally.
