Garlic Butter Steak Bites with Rosemary

These Garlic Butter Steak Bites are delicious and infused with rosemary for the ultimate skillet steak bite recipe! Tender steak bites are sautéed to perfection with a tender interior, letting butter and garlic do all of the aromatics with this easy 20 minute recipe.

Best Steak for Steak Bites

The first step to making these is to have steak on hand! This is a great recipe for using a medium tender steak with a small amount of fat. 

  • Sirloin: This is what we used. It cooks up easily, and is a middle of the road option as far as price is concerned. I like using Sirloin if I’m serving this to more guests than just my family
  • Ribeye: Ribeye has fat marbling making it very tender. This is perfect if you want a rich taste versus a snack.
  • Filet Mignon: Notably the priciest, I would only suggest using Filet Mignon if you serve steak bites as a main course. Be cautious not to overcook this one especially, the beauty is in the tenderness!

Making Steak Bites

  • Cut the steak into about 2 inch pieces. You don’t want to cut them too small, because the bigger the piece, the easier it is to keep it tender (the steak cooks too fast if it’s cut small which will result in tough bites). 
  • Once the steak is cut, mix together a butter based seasoning. The butter as a base acts as not only flavor, but it helps the steak sear to a nice golden brown!

It’s truly chef’s choice as to how you want to season your steak bites, you can go simple with just salt and pepper, but we like ours amped up a little bit. I’ll list what we used below!

Steak Bite Seasoning

  • Melted Butter: Keep in mind if you use salted butter, to reduce the addition of salt by half.
  • Salt
  • Pepper
  • Granulated Garlic
  • Smoked Paprika: I love a little smokey flavor on my steak.
  • Chives: For color, and flavor I like to add a little chives.

Toss the cut steak bites in the butter seasoning mixture, allowing it to sit for about 5-10 minutes to absorb the flavor. While the steak is marinating, heat 2 tbsp of olive oil in a pan on medium high heat. Be cautious of splatter for the next step (we recommend using a wire pan cover).

Add the steak to the pan, and do not stir (this will feel odd, but in order for the steak to develop a good sear, it needs to brown well!). When meat is seared well, it releases from the pan by itself. If it’s not seared, it will stick. Allow the steak bites to come to a golden brown on one side, then using tongs, turn them to the opposite side. Once golden brown and cooked to your liking, remove from the pan. 

If you aren’t sure how you like your steak cooked, here’s a great guide. I prefer mine to be medium rare, I like a little bit of pink. An electronic meat thermometer is your best friend with any steak recipe!

Once the steak bites are fully cooked, you can add a little more flavor by adding some chopped fresh rosemary and tossing them with it. It adds a nice little boost of flavor. You could also use thyme, oregano, fresh chives, any herb you have in your garden!

I love steak bites served as an appetizer, but they work great as a main course as well. A classic combination of steak, and a good wedge salad is my favorite!

Ingredients

  • 1.5 lb sirloin
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp cracked pepper
  • 1/2 tsp smoked paprika
  • 1 tsp granulated garlic
  • 2 tsp dehydrated chives
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary (chopped)

Instructions

  • Mix marinade; combine melted butter, salt, pepper, garlic, paprika and chives. Set aside.
  • Cut sirloin into 2 inch cubes and place in medium size bowl. Pour marinade over steak and toss with clean hands to coat. Allow to rest for 10 minutes.
  • Heat olive oil in a pan on medium high heat. Add steak, and allow to cook for 1-3 minutes, or until a golden sear forms and desired doneness is reached.
  • Rotate steak to opposite side and cook until a golden sear has formed.
  • Remove from heat, and toss steak bites with rosemary. Serve & enjoy.
