Ground Chicken Chili

Ground Chicken Chili  Hearty and Healthy!  You will never miss the beef in this flavorful easy to make chili recipe.

When it comes to ground beef vs. ground chicken, chicken always wins around here!  Nothing against beef, we all love it but it can be heavy.  Ground chicken is a great substitute for ground beef if your looking for a lighter meal.

Ingredients for Ground Chicken Chili –

  • ground chicken – we prefer 93/7 rather than ground chicken breast which can be very dry.
  • beans – we opted for kidney beans for this recipe but black, cannelli or even garbanzo will work.
  • tomatoes – we used tomato paste to make it thick and crushed tomatoes for a hearty consistency.
  • peppers – we used poblano for a little heat but feel free to substitute any color bell pepper for no heat.  Or go big heat with an added diced jalapeno pepper!
  • onion and garlic 
  • brown sugar – just 2 tablespoons, love the slight sweetness
  • chicken  broth
  • cumin and chili powder 

The entire process for this chili is around 30 minutes start to finish and that includes 10 minutes of simmering so we are talking super fast easy chili!

Simply brown your ground chicken and veggies, add in the remaining ingredients, simmer and serve!

Substitutes and tips to make Ground Chicken Chili –

  • ground turkey can easily be substituted for ground chicken however, we recommend 93/7 fat content.
  • add some heat! – chop up a jalapeno pepper or add some of your favorite hot sauce
  • clean out the veggie drawer! – chopped carrots, sweet potatoes, parsnips and fresh tomatoes help to fill the pot.
  • use all the beans – black, white, cannelli and even garbanzo
  • store in the refrigerator for up to 3 days and freeze for up to 3 months
  • top with sour cream, avocado and grated cheese!

How to make Chicken Chili in your Slow Cooker –

  • Brown the ground chicken and veggies in a skillet.  Add to the slow cooker along with all the other ingredients.  Cook on low 5-6 hours or high 2-3 hours.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken 93/7 - ground turkey can be substituted
  • 1 medium yellow onion chopped
  • 1 medium poblano pepper, chopped - any color Bell pepper can be substituted
  • 3 garlic cloves chopped
  • 3 tablespoons tomato paste
  • 1 15 ounce can crushed tomatoes - or tomato sauce
  • 1 15 ounce can can diced red tomatoes, undrained
  • 1 cup chicken stock
  • 1 15 ounce can kidney beans drained and rinsed
  • 2 tablespoons brown sugar
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 1 teaspoon pepper

Instructions

  • In large soup or stock pot heat one tablespoon olive oil. Add ground chicken. Cook until brown and cooked through breaking apart until crumbly.
  • Add onion and poblano pepper to pot. Continue to cook until onion and pepper are tender. Add garlic and cook for another 2 minutes.
  • Add crushed and diced tomatoes, spices and chicken stock. Bring to a simmer. Add drained beans. Season with salt and pepper.
  • Simmer for about 10 minutes. Taste for seasoning. More cumin? Chili powder? Salt?
  • Serve with your favorite toppings!

Notes

Store leftovers in sealed container in the refridgerator for up to 5 days or freeze in freezer bags for up to 3 months.
