Sheet Pan Sausage and Veggies

We love this Sheet Pan Sausage and Veggies – it’s the perfect dinner any night of the week.  Made with smokey sausage, fresh vegetables and a simple vinaigrette of olive oil, garlic and spices. This one pan dinner is done in less than 40 minutes and perfect for meal prep.

Ingredients for Sausage and Veggie Sheet Pan Dinner –

  • Sausage – we buy precooked Kielbasa type. This dish is as good as the sausage you buy, so be picky.
  • Sweet Potatoes – red or white potatoes can be substituted as well.  Cut into bite size pieces.
  • Brussell Sprouts 
  • Red and Yellow Peppers
  • Red Onion
  • Simple Marinade – olive oil, garlic, Italian Seasoning.  You can substitute Italian Dressing as well.

NOTE:  If using uncooked sausage links leave them whole.  Poke with a fork to keep the sausages from bursting and nestle into the chopped veggies.  Slice up after cooked and toss back in.

Line a large sheet pan with foil for easy clean up.  You will be so glad you did!

How to make sausage and veggies on a sheet pan

 

One of the best things about this easy sheet pan dinner is how versatile it is.

  • swap sweet potatoes for red or yukon potatoes.
  • add broccoli, zucchine, carrots or cauliflower.
  • use spicy sausage for a kick or chicken sausage if watching your calories and fat.
  • try our Lemon Dijon Vinaigrette for some added flavor.

Mix up your olive oil and herbs. Pour it all over those beautiful veggies and sausage then give it a good toss.

What to serve with Sheet Pan Vegetables and Sausage –

  • Oven Baked Rice –   Once you try this method you will never go back to stove top. You can also oven Baked Brown Rice and Quinoa.  Who knew?
  • Foccaccia Bread – my family loves this bread.
  • Broccoli Rice and Cheese – more veggies!

Sheet Pan Sausage and Veggies

A healthy and super fast dinner that doubles as lunch for days of healthy eating!

Ingredients

  • 1 pound pre-cooked sausage we like Aidells smoked chicken sausage but any pre cooked sausage will do
  • 1/2 pound brussels sprouts, halved
  • 1 small sweet potato, peeled and cubed
  • 1 small purple onion, chopped
  • 1 red pepper, seeded and chopped
  • 1 yellow pepper, seeded and chopped

Marinade

  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon italian seasoning or 1/2 teaspoon oregano and 1/2 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 400 degrees. Line large baking sheet with foil for easy clean up.
  • Spread sausage and veggies out onto prepared sheet pan.
  • Combine olive oil, seasoning, salt and pepper.  Pour over sausage and veggies and toss.
  • Bake for 30 minutes or until brussels and sweet potatoes are tender.
  • Serve with rice or quinoa.

Notes

 Swaps and add ins: red or white potatoes, broccoli, leeks, artichokes, carrots, cauliflower.  The possibilities are endless!
If using whole uncooked sausage links: poke with a fork a few times and nestle into the cut veggies.  Bake then slice and toss back in.

    I have made this twice , I serve over yellow rice witch makes this a very colorful dish!Everyone loves this and it’s really super easy !I do cook the potatoes first for 10 min.
