Sheet Pan Sausage and Veggies

This Healthy Sheet Pan Sausage and Veggie dinner does double duty!  Will feed you for dinner than lunch …a dinner that keeps on giving!

Fresh brussels, sweet potatoes and peppers combined with smokey sausage,  all tossed up in a simple but flavorful olive oil and garlic marinade!

 Buy pre-cooked sausage for this healthy sheet pan dinner.   We used a smoked version.  There are a plethora of really great and healthy sausages out there these days.  We love Aidells Smoked Chicken Sausage . (not a sponsor, just a great sausage!).  But you could use any of your favorites, even a simple Kielbasa would do the trick.  This dish is as good as the sausage you buy, so be picky.

NOTE:  If using uncooked sausage links leave them whole.  Poke with a fork to keep the sausages from bursting and nestle into the chopped veggies.  Slice up after cooked and toss back in.

HOW TO MAKE SHEET PAN SAUSAGE AND VEGGIES:

Line a large sheet pan with foil for easy clean up.  You will be so glad you did!

Chop your veggies and slice the sausage. Hey, guess what?  You are almost done and we just got started…love this recipe!

You can sub white potatoes for the sweet potatoes.  Add broccoli for the brussels.  Carrots, zucchini, squash cubes….the possibilities are endless!

Mix up your olive oil and herbs. Pour it all over those beautiful veggies and sausage then give it a good toss.

In the oven it goes and you still have a half glass of wine left!  It’s a ‘one glass of wine’ dish! (we use the wine o’clock around here.  1/2 glass is about 10 minutes.  Full glass for 15-20).

While the sheet pan is doing its sheet…  er, stuff.  (can’t help it!).   Get your side dish going.  Did you know you can oven bake quinoa, rice and brown rice?  Once you try this hack, you will never go back!  okay, putting the chardy away…starting to rhyme.

You have dinner and guess what?  You have tons of healthy sausage and veggies left over!  What do do?  Meal prep for lunch!  A little rice, a little sausage and veggies and you are rocking’ lunch all week long!

A healthy and super fast dinner that doubles as lunch for days of healthy eating!

Ingredients
  • 1 pound pre-cooked sausage we like Aidells smoked chicken sausage but any pre cooked sausage will do
  • 1/2 pound brussels sprouts, halved
  • 1 small sweet potato, peeled and cubed
  • 1 small purple onion, chopped
  • 1 red pepper, seeded and chopped
  • 1 yellow pepper, seeded and chopped
Marinade
  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon italian seasoning or 1/2 teaspoon oregano and 1/2 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 400 degrees. Line large baking sheet with foil for easy clean up.

  2. Spread sausage and veggies out onto prepared sheet pan.

  3. Combine olive oil, seasoning, salt and pepper.  Pour over sausage and veggies and toss.

  4. Bake for 30 minutes or until brussels and sweet potatoes are tender.

  5. Serve with rice or quinoa.

Recipe Notes

 

5 WW freestyle points.  1/3 of a sausage, 2 ounces of sweet potato and 2 teaspoon olive oil.

Swaps and add ins: red or white potatoes, broccoli, leeks, artichokes, carrots, cauliflower.  The possibilities are endless!

If using whole un cooked sausage links: poke with a fork a few times and nestle into the cut veggies.  Bake then slice and toss back in.

Use pre-cooked sausage.  We like smokey flavors and healthy sausages.  Check the package for added ingredients like sugar and preservatives.

    I have made this twice , I serve over yellow rice witch makes this a very colorful dish!Everyone loves this and it’s really super easy !I do cook the potatoes first for 10 min.
