We love easy and simple, and that’s the basis for these gooey, easy and delicious Bean and Cheese Burritos. We bake them to perfection for the most delicious and easy 20 minute burrito recipe.

Baked Bean and Cheese Burrito Ingredients
This is a very simple recipe. I like the addition of rice to my bean and cheese burritos, it adds a layer of structure and also makes them a little more filling!
- Refried Beans
- You can use low or no fat if desired.
- Rice
- For this recipe I either use leftover rice, or I will use microwave or frozen rice to save time.
- White or brown rice, chef’s choice.
- Cheese
- Shredding your own cheese makes for the gooiest burrito, but pre shredded will work in a pinch. We use Mexican blend.
- Taco Seasoning
- Homemade, or pre packaged. If using homemade this is a great recipe.
- Mild Diced Green Chilis (canned)
- If you like spicy, use canned jalapeños. Green Chilis are very mild and will give virtually no spice.
Making Baked Bean & Cheese Burritos
In a large bowl, combine the burrito filling ingredients, and mix until smooth. Give it a taste to see if you need to add anything else- more taco seasoning? Another can of chilis? This is so easy to make to your liking.
Fill and roll the burritos, and place them seamside down into a casserole dish as desired. I like to bake the burritos with a little bit of extra cheese sprinkled on them! Bake for about 15 minutes at 400 degrees fahrenheit. If you
Frozen Bean Burrito Recipe
If you want to use these burritos for meal prep, simply skip the baking part, and roll the burritos as desired.
- Freeze them on a sheet pan covered with plastic wrap, and once fully frozen, transfer to a large ziplock bag (pre-freezing helps with them not sticking together!).
- When you want to reheat, simply place in a paper towel and microwave for 30 seconds at a time until warmed throughout.
Baked Burrito Recipes
This recipe is so easy to customize! If you want to add more protein or vegetables it is super simple to add. You can even use a rotisserie chicken from Costco, or leftover chicken from the day prior.
- Chicken: Add 1 cup of shredded chicken to the bean mixture.
- Spicy: Add 3 tablespoons of canned jalapeños to the burrito filling mixture.
- Vegetable: Reduce beans by half, and in a pan with 2 tsp of olive oil, sauté 1/4 cup corn, 1/4 cup diced red bell pepper, 1/4 cup chopped white onion, and 1/4 cup chopped tomato until onion is lightly translucent.
Once the burritos are baked, I like to top them with a mild hot sauce drizzle, and chunks of avocado for some color.

Ingredients
- 2 16 oz cans refried beans (low or full fat)
- 1.5 cups shredded cheese (reserve 1/2 cup for topping)
- 1 cup cooked white rice
- 1 4 oz can chopped green chilis
- 1.5 tbsp taco seasoning
- 8-10 flour tortillas
Instructions
- Preheat oven to 400 degrees fahrenheit. Spray a 9x13 inch casserole dish and set aside.
- In a large bowl, combine beans, 1 cup cheese, rice, green chilis and taco seasoning. Mix to combine.
- Begin to prepare burritos by adding roughly 1/4-1/2 cup of filling to each burrito. Roll and place burritos seamside down. Top with reserved 1/2 cup of cheese.
- Bake burritos for 15 minutes, or until warmed throughout.
