We’re famous for our one pan meals! This one is no exception, tender chicken pieces meet fresh vegetables and perfectly cooked quinoa all in one skillet. I love this recipe for healthy leftovers, and it works great to clean out the refrigerator, too!
Chicken Quinoa Dinner Recipe
Sometimes, I want a big pan of dinner on the stove, and I want to light a candle and pretend I live somewhere cozy. This dinner recipe is perfect for that kind of night! I started making this and it has become so much of a regular recipe made in my house I knew I had to blog it.
This chicken quinoa dinner recipe is super adaptable to whatever you have in your refrigerator. I used a medley of vegetables I needed to use before they expired: Fresh corn off the cob, red bell pepper, English peas and onion. You could use whatever you have available. I’ll give some suggestions further down the post!
Ingredients for Chicken Quinoa Skillet Dinner
I really encourage you to use what you have available for this recipe!
- Protein: I used chicken thighs, you could use any cut you have on hand, chicken breasts included. You could very easily use shrimp as well! If using shrimp, add it towards the end so it steams along with the quinoa to prevent it from becoming overcooked.
- Vegetables: We used fresh corn off the cob, red bell pepper, sweet onion, and peas. This dish works well with really any vegetable. The only vegetable I would not encourage is zucchini. Too watery and it falls apart!
- Broth: I used regular chicken broth but bone broth would give some good added protein as well!
- Quinoa: Any variety works! I buy mine at Sprouts.
- Seasoning/herbs: You know we encourage fresh herbs around here! If you don’t have fresh, dried will work. We used a mixture of thyme, garlic and oregano.
Cook the Quinoa Right in the Skillet!
Once the chicken and and vegetables are cooked add in the quinoa and stir (the chicken can be a little underdone, it will continue to cook with the broth and quinoa). After that, add in the broth and reduce the heat to low. The quinoa will cook up to fresh and fluffy perfection in about 15 minutes!
Give this a good stir before serving. I like to add a little feta cheese for extra flavor along with some more fresh herbs.

Easy Chicken Quinoa Skillet Dinner
Ingredients
- 1 tbsp olive oil
- 1 lb chicken breast (cut into 1 inch cubes)
- 1/2 cup white onion (chopped)
- 1/4 cup frozen green peas
- 1 cup fresh corn off the cob
- 1/2 cup red bell pepper (chopped)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh chopped garlic
- 1 tsp thyme
- 1/2 tsp oregano
- 1 cup quinoa
- 1.5 cups chicken broth
Instructions
- In a large skillet with a lid, heat olive oil on medium high heat. Add onion and cook for 2-3 minutes. Add chicken, along with salt, pepper, garlic, thyme and oregano. Cook until exterior is browned (chicken may be a little underdone at this point which is okay- it will fully cook with the remainder of the recipe).
- Add vegetables and sauté for about 2 minutes.
- Add quinoa, followed by chicken broth. Reduce heat to low, and allow to simmer for about 15 minutes, or until quinoa is light and fluffy. Stir about every 5-7 minutes while cooking.
- Add feta cheese for topping if desired. Serve and enjoy!
