If you’re looking for a fresh take on nachos, with the healthy addition of sweet potato rounds as the chips, you’re in for a real treat! I think I actually prefer this version to traditional nachos. Sweet potatoes are peeled and sliced thin, then baked to perfection for a soft, tender layer which naturally adds more heartiness and nutritional value than traditional nachos.
Making Nachos with Sweet Potatoes
Instead of using tortilla chips, we use a base of sweet potatoes, cut thinly, and roasted, as the base for these nachos. The secret to perfect sweet potatoes is to cut them all the same size, and to season them well with olive oil and seasoning before baking. The olive oil helps roast the sweet potatoes, giving them a nice caramelized edge, and the natural sugars in the sweet potato help roast them to a crisp underside.
Sweet Potato Nacho Seasoning:
- Olive Oil: To help roast and caramelize.
- Salt
- Pepper
- Smoked Paprika: I really encourage you to not skip this one, it adds a really nice smokey flavor to the sweet potatoes.
- Granulated Garlic
- Cayenne Pepper: Optional, but great if you like spicy.
Helpful Tips for Baked Sweet Potato Chips
- Peel and slice the sweet potatoes, then place them on a parchment lined baking sheet.
- I encourage using parchment paper over foil as the sweet potatoes stick less to it.
- When you slice the sweet potatoes, make sure they are cut to about the same width, so that they look evenly. A mandolin works great for this, but be sure to use the guard! The thinner the chips, the crispier they’ll be. I actually prefer mine to be a little thick because I like the flavor.
- Toss the sweet potatoes in olive oil, and then the seasoning. Make sure each piece gets fully coated in olive oil and seasoning so they cook evenly.
- Cook the sweet potato ‘chips’ until they’re cooked to your liking. You may prefer a softer or a crisper chip, so check them often to be sure they’re cooked to your preference.
Making Nachos with Sweet Potatoes
While the sweet potatoes are baking, prepare the toppings.
- You can use any meat you like (or go vegetarian, even!). I use this easy taco meat recipe. You could also use this slow cooker chicken taco meat.
- I recommend using hand shredded cheese versus pre shredded. Hand shredded melts way better, read about it here!
- Use salsa, guacamole, sour cream, tomatoes, jalapeños, olives, crema, cilantro, onion, or any other nacho ingredients you love!
Serving Sweet Potato Nachos
I like to transfer the sweet potato chips to a parchment lined platter or serving dish, and load them up! If the sweet potatoes are a little softer, I recommend serving them with a small plate & fork so they’re easier to cut up.

Sweet Potato Nachos
Equipment
- 1 18x26 inch sheet pan
- parchment paper
Ingredients
- 2 large sweet potatoes (washed and peeled)
Nacho Toppings
- 1 lb ground beef
- 2 tbsp olive oil
- taco seasoning
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp granulated garlic
- 1/2 tsp smoked paprika
- 1/4 tsp each salt/pepper
Toppings as Desired
- 1 cup shredded cheese
- 1 avocado (diced)
- 1/4 red onion (diced)
- 1 cup cherry tomatoes (cut/diced)
Instructions
- Slice peeled sweet potatoes to thin, even slices.
- Preheat oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper. Add sweet potato slices, along with olive oil, and seasonings. Toss to fully combine, and arrange on the sheet pan so they don't overlap.
- Bake for approximately 20-25 minutes, or until sweet potato slices are cooked to your liking.
Taco Meat
- Add olive oil to pan, along with ground beef. Break apart ground beef, and add seasoning. Continue to cook until slightly browned and fully cooked to temperature. Allow to slightly cool and set aside.
Assembly Nachos
- Transfer sweet potato slices to a serving platter, and add taco meat, shredded cheese, and toppings of choice. Serve, & enjoy!
