Slow Cooker Chicken Tacos

Who doesn’t love Tacos? These easy Slow Cooker Chicken Tacos are what crockpot dreams are made out of! A simple 4 ingredient recipe with chicken, *beer, taco seasoning, and salsa creates the perfect flavor, and a trick to shred the chicken right in the slow cooker pot makes this a recipe you’ll use time and time again.

*The alcohol in the beer cooks out, keeping this recipe family friendly!

The trick to perfect slow cooker chicken is to not open the lid for at least 2 hours on high to let the chicken fully cook.

Place 4-5 chicken breasts in a slow cooker, along with beer, salsa, and taco seasoning (I use store-bought but you can make your own as well if you choose, this one is great AND healthy!). If you prefer a spicier combination, try using a spicier salsa, or adding some red pepper flakes. Give it a good stir, cook on high for about 4 hours, and keep that lid shut to retain the heat in the slow cooker. Chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit, so make sure to check with a meat thermometer just to be safe! You can also choose to go the low and slow method, and cook the chicken on the low setting for at least 4 hours.

  • Be cautious when doing this- warm liquid can splatter, so start slow and be careful…You have been warned! : )

Use a hand mixer to shred the chicken into perfect chicken taco goodness! If you don’t have one, you can shred each piece individually with a fork on a cutting board. Quick tip- there will appear to be a fair amount of liquid in the slow cooker but fear not- this will melt right into the shredded chicken for juicy flavor.

You can certainly add more vegetables to the taco meat if you like- here’s a few ideas, simple add them in with the raw chicken and let them all cook together:

  • Diced onions
  • Corn (fresh, canned & drained, or frozen)
  • Black or Pinto Beans
  • Red, Yellow, Orange or Green Bell Pepper
  • Poblano or Jalapeno Pepper
  • Diced Canned Green Chilis
  • Canned black olives (drained)

Ingredients

  • 4-5 boneless skinless chicken breasts
  • 1 cup beer (Corona, Modelo, or any Mexican beer is preferred)
  • 3 tbsp taco seasoning (chef's choice)
  • 1 cup salsa (chef's choice)

Instructions

  • Place all ingredients into slow cooker. Stir to combine.
  • Cook on high for at least 2 hours, or low for at least 4. Once chicken reaches internal temperature of 165 degrees fahrenheit it is fully cooked.
  • Do not drain liquid- shred chicken and combine with slow cooker liquid. Serve as desired and enjoy!

Notes

Note: This is a family friendly recipe- any alcohol in the beer will cook out in the slow cooker.
