Sometimes a regular old weeknight vegetable needs some sprucing up! Thai Sweet Chili Brussel Sprouts are super easy and they make for a much more flavorful weeknight side dish than just steamed veggies. I’ve even served them as an appetizer on skewers!
I love me some brussel sprouts! It’s funny, brussel sprouts have gone through a cultural shift. They used to be coined as the vegetable nobody liked, but now, they’re trendy and everybody loves them. Besides my 4 year old that is! We started really loving brussel sprouts about 10 years ago with our smashed brussel sprout recipe. They actually went viral! We had a blog expert we hired tell us “that recipe will never do well”. He was wrong!
Making Thai Chili Brussel Sprouts
This recipe is super simple to make. I do have a few tips for perfect results.
- Halfed brussel sprouts are hard to keep together, so you want to first half the brussel sprout, brush with Thai chili sauce, and bake face down along with some salt and pepper.
- This will roughly caramelize them and hold the layers together so they can be coated in the next step.
You can purchase Thai chili sauce at most grocery stores in the Asian food aisle. I usually purchase mine at Trader Joes. I’m not a big fan of spicy food and I find that the Trader Joes version is pretty mild. If you are a big fan of spicy, you could also add some more chili flakes.
As far as brussel sprouts are concerned, I recommend buying whole and halving them yourself. The pre-cut brussel sprouts are usually alot smaller, and they seem to be not as bright tasting to me.
Next, after allowing the brussel sprouts to cool for a few minutes, coat them in sweet chili sauce and toss to combine. I like this part, it makes me feel like a restaurant chef. : ) Actually, the chef part is these metal bowls- I love these things. I like to refrierate them and then toss a big salad in them for a cool dinner on a hot night.
Place the coated and tossed brusel sprouts back on the sheet pan, and roast for another 5 minutes so the Thai chili sauce gets all caramelized.
I like to drizzle a little extra sweet chili sauce on these before serving! A little squeeze of lime is also great on them.
I’ve served these with salmon and white rice, it’s a meal everybody seems to love (that is relatively healthy, too!). These are also great with chicken thighs and a little orzo salad for a fresh tasting Summer meal.

Thai Sweet Chili Brussel Sprouts
Ingredients
- 4 cups brussel sprouts (halved)
- 1/2 tsp salt
- 1/2 tsp pepper
- 3/4 cup Thai sweet chili sauce
Instructions
- Preheat oven to 350 degrees fahrenheit. Line a sheet pan with parchment paper. Set aside.
- Place Thai chili sauce in a bowl. Lightly dip bottom of halved brussel sprouts into chili sauce and place on parchment lined baking sheet. Brush tops with chili sauce (save remaining chili sauce for last step). Sprinkle with salt and pepper.
- Bake for 10-12 minutes, or until lightly roasted.
- Allow brussel sprouts to slightly cool, and transfer to a bowl with remaining chili sauce. Toss to combine. Place back on baking sheet and bake for additional 5 minutes.
- Allow to cool, and serve immediately.
