 Easy Mediterranean Salad Dressing comes together in about 3 minutes!  No store bought stuff here!  Olive oil, vinegar, lemon juice, dijon and oregano make up this delicious and healthy Greek style salad dressing.

This bright, zingy and easy to make salad dressing does double duty as a Greek Marinade as well.  Use it on chicken, fish, pork and roasted vegetables.   It does something for everyone!

Ingredients for Mediterranean Salad Dressing

  • Extra Virgin olive oil – the better quality the oil, the better the salad dressing.
  • Vinegar – white or red wine vinegar works best but plain old white vinegar or apple cider vinegar make great substitutes
  • Fresh Lemon Juice
  • Fresh Garlic
  • Dijon Mustard – dijon is a natural emulsifier and brings the oil and the vinegar together, plus adds a great zing!
  • Dried Oregano
  • Salt and Pepper

No special tools required for this easy homemade dressing.  Chop some garlic, toss it all together with the rest of the ingredients and you have the most simple and delicious dressing!

Bright and zingy with only a few ingredients. This Greek style salad dressing will become a staple!

Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons white wine vinegar Substitute: red wine vinegar, apple cider vinegar or plain distilled vinegar in a pinch
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic - minced
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Add all ingredients to a jar or sealed container and shake.
  • Best chilled for 30 minutes before serving.
