Mushroom Rice – {oven baked recipe}

This ONE PAN Mushroom Rice recipe is easy and so delicious! Never underestimate the power of a good side dish. Elevate that simple dinner with this delicious and easy rice casserole!

Let’s give easy side dishes some credit. They can lift a plain old chicken dinner up to a new level! This is one we make all the time around here as I have a deep love of anything with mushrooms in it. So easy, one pan, no special rice required. Whatever you have will work!

No mushrooms? No worries you can still use this rice cooking method with our Baked Rice Recipe!

INGREDIENTS FOR MUSHROOM RICE – (see entire recipe in recipe card below).

  • 8 ounces cremini mushrooms – these are actually baby portabello’s and have a great texture and deep flavor.
  • rice – short grain, long grain, brown or white rice will work. (see recipe notes for brown rice instructions)
  • onion
  • water – or chicken stock
  • butter
  • thyme

HOW TO MAKE EASY MUSHROOM RICE IN THE OVEN –

This is gonna go quick!

Simply combine the rice, mushrooms, onion,thyme, salt and pepper in a 2 quart casserole dish with a lid. If you dont have a lid, aluminum foil will work!

Heat two cups of water (or broth) in the microwave in a microwave safe measuring cup until very hot. About two minutes.

Pour over the rice and give a stir.

Cover and cook at 400 degrees for about 25 minutes or until rice is tender and all liquid is gone.

WHAT TO SERVE WITH BAKED RICE –

Everything in one pot and in the oven it goes! This delicous Mushroom Rice will kick up any plain dinner!

Ingredients

  • 1 cup uncooked rice – any variety (see notes below for brown rice)
  • 2 cups water – or chicken broth
  • 1/4 cup diced onion
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms – sliced
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  • Heat oven to 400 °F.
  • In a 2 quart casserole with a lid add: rice, onion, butter, mushrooms, thyme, salt and pepper.
  • In a two cup microwave safe measuring cup heat water or broth in microwave for two minutes or until very hot.
  • Pour hot water over rice mixture and stir. Put lid on (or cover with foil). Bake 25 minutes and check. If all water is gone put lid back on and cool for 5 minutes. Fluff with a fork and serve!

Notes

  • FOR BROWN RICE: decrease water to 1 3/4 cup and bake for 50 minutes.
  • No lid to fit your casserole dish? – Just cover tightly with foil!
