Salsa Chicken

With just a few ingredients you can bake up this healthy, protein packed Salsa Chicken.  Tender and juicy chicken sprinkled with taco seasoning and smothered in salsa.  Oven baked for easy clean up and perfect for weeknight dinners.

If your looking for a fast, easy, healthy dinner look no further!  We have this on repeat and make it several times a month.

Use the leftovers to stuff tacos, burritos or on top of a fresh salad.  This Easy Oven Baked Chicken recipe never dissapoints.

Ingredients for Salsa Chicken –

  • Chicken – breasts or cutlets
  • Salsa – buy the chuncky variety which will keep it less watery
  • Taco Seasoning – just a packet of regular store bought
  • Grated Cheese – any variety you like

5 Minute prep – let’s get started –

  • Place your chicken breasts in a casserole dish.
  • Rub on the store bought taco sesasoning.

Coat with taco seasoning

Add-in’s for Salsa Chicken – such a versatile dish:

  • sprinkle with corn – fresh, frozen thawed or canned drained.
  • all the veggies – zucchini, broccoli, cauliflower – just simple sprinkle around the chicken and they will bake up at the same time.
  • beans – black beans would be a great addition
  • change up the salsa – salsa verde or a super spicy salsa if you like it hot

Bake for 20 minutes and top with cheese
  • spoon on the chunky salsa
  • bake for 20-25 minutes depending on the thickness of your chicken.
  • top with cheese and return to oven until all melty and yummy.  We love melty and yummy!

How to serve this dish –

  • We love to serve with a side of our Best Spanish Rice
  • Shred it up and serve it in a taco.
  • Chop it up and toss in a salad for a perfect protein packed lunch or dinner.
  • Quesadilla’s, Nacho’s, taquito’s – so many uses.

Salsa Chicken

The easiest fresh and fast dinner you will make. Chicken breasts, store bought taco seasoning and salsa topped with cheese and oven baked.

Ingredients

  • 4 chicken breasts - or chicken cutlets
  • 1 cup chunky salsa
  • 4 tablespoons taco seasoning
  • 1 cup grated cheese

Instructions

  • Preheat oven to 400 degrees. Spray a casserole dish with non stick spray. (I used an 8 x 8 but you may need a 9 x 13 depending on the size of the chicken).
  • Place the chicken in the casserole dish and rub one tablespoon of taco seasoning on each piece.
  • Spoon on the chuncky salsa covering the entire piece of chicken.
  • Bake for 20-25 minutes or until internal temperature of chicken reaches 165 degrees.
  • Remove from oven and top with grated cheese. Bake an additional 5 minutes until cheese is melted.

Notes

Store in refrigerator for up to 4 days.  Freeze for up to 3 months.
