I love a no bake recipe that yields a delicious treat, full of protein, and one that my son loves to eat. Enter, No Bake Peanut Butter balls! I make these once a week for my son and he will eat about 3 in one sitting for an after school snack that I feel good about serving him. These delicious little bites of protein packed goodness are full of peanut butter, oats, chocolate chips, coconut, honey and a dash of vanilla extract. They take about 5 minutes to mix, 10 minutes to roll, and if you make them once, you’ll make them again and again!

Why We Love this No Bake Peanut Butter Ball Recipe
Anything that doesn’t require me to turn on my oven, but still fills a sweet treat void is a winner in my book. I actually really love recipes that are as easy and simple as possible (and that’s how our blog started, actually). This recipe is actually perfect to make with kids! They can measure the ingredients, turn on the mixer, form them into balls, and they’re ready to eat immediately.

Making Peanut Butter Balls
You don’t need a ton of ingredients to make these, which is the best part! You’ll need oatmeal, peanut butter (smooth or crunchy), coconut (optional but I like it), honey, and vanilla extract. Combine the ingredients in a mixer with a paddle attachment and mix until fully incorporated.
After mixing, roll the oatmeal and peanut butter mixture into balls. I like to use a 1 tbsp measuring scoop (either a cookie scoop or a measuring spoon). Place the peanut butter balls on a parchment lined baking sheet. Once you’ve fully rolled all of them, place them in the refrigerator for about 10 minutes to let them stiffen up.
Tips for the Best No Bake Peanut Butter Balls
- You can use crunchy peanut butter, but regular smooth will stick better. I caution against using natural peanut butter as it doesn’t stick as well.
- Chill before enjoying. This helps keep their shape.
- If you are gluten free, be sure to purchase gluten free oatmeal (some generic brands have trace amounts of flour).
- A stand mixer with a paddle attachment works best, but you can use a spatula to mix by hand as well.
Storing Peanut Butter Balls
These keep so well! After letting them refrigerate and harden a little, transfer them to a lidded container. These last well in the refrigerator for up to one week.
If you are transporting these, be mindful that the peanut butter can melt! Pack in a cooler if needed (like on a field trip).

No Bake Peanut Butter Balls
Equipment
- 1 18x26 inch sheet pan
- parchment paper
Ingredients
- 1.5 cups rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1/3 cup chocolate chips
- 1/4 cup shredded coconut (sweetened or unsweetened)
- 1 tsp vanilla extract
Instructions
- Line sheet pan with parchment paper. Set aside.
- Combine all ingredients into a stand mixer bowl. Use paddle attachment.
- Scoop peanut butter mixture into 1 tbsp portions and roll into balls. When finished, place in refrigerator for 10 minutes to firm peanut butter balls into shape.
- Transfer peanut butter balls to a lidded container and store in the refrigerator for up to 1 week.
