Pineapple Chicken – Sheet Pan Dinner

Pineapple Chicken on a Sheet Pan!  Tender chicken pieces mixed in a sweet and savory BBQ-soy sauce and  all tossed up  with bell peppers and chunks of sweet  pineapple!  One pan easy, healthy and delicious – dinner trifecta!

Pineapple Chicken on a sheet pan

This full flavored chicken sheet pan dinner comes together in just minutes and in the oven it goes!

Perfect for weeknights and meal prep.  We like it with a side of rice, quinoa or even pasta!

Ingredients to make Pineapple Chicken –

  • boneless chicken breasts – or chicken thighs
  • red bell pepper
  • pineapple chunks – fresh, frozen (thawed) or canned
  • BBQ sauce – whatever you love
  • Soy sauce
  • brown sugar
  • green onion for garnish

First dice up your chicken into about 1 inch pieces.  In a medium bowl mix up your bbq sauce, soy sauce and brown sugar.  Add in the chicken and set aside letting it marinade while you prep the veggies.  NOTE: You can marinade the chicken up to 24 hours in advance.  Longer it hangs in the sauce the better it gets!

While the chicken hangs out for a bit, cut the bell pepper in to a large dice, about 1/2 inch pieces.  Drain the pineapple if using canned.  Your almost done!

Line a large baking sheet with parchement or aluminum foil for easy clean up.  Sprinkle on the chicken pieces and add the diced pepper and pineapple.

In the oven it goes!  That’s it, you just made dinner and everybody loves you!

PRO- TIP!  Use our Oven Baked Rice recipe and cook it along side the Pineapple Chicken.  Talk about an easy meal!

Variations and additions –

  • Add all the veggies! – broccoli, cauliflower, zucchini, peas, small diced carrots, onion…the list goes on and on.  Clean out the fridge!
  • Swap chicken pieces for medium size shrimp.  (shrimp cooks up quickly, give the veggies a 10 minute head start then bake for an additional 10-12 minutes until shrimp is cooked through).

Ingredients

  • 2 boneless chicken breasts
  • 1 large red bell pepper
  • 2 cups pineapple chunks - canned-drained, frozen-thawed or fresh
  • 1/2 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar

Instructions

  • Preheat oven to 400 degrees. Line a large sheet pan with parchment or aluminum foil for easy clean up.
  • Cut chicken into about 1 inch pieces. Add to medium size bowl. Add bbq sauce, soy sauce and brown sugar. Toss and set aside.
  • Cut bell pepper in large pieces, about 1/2 inch. Drain pineapple if using canned. (drain well).
  • Spread chicken pieces evently over sheet pan. Sprinkle bell pepper and pineapple around chicken pieces.
  • Bake for about 20 minutes or until chicken is cooked with an internal temperature of 165 degrees.
  • Garnish with sliced green onions and serve with rice on the side if desired.

Notes

Serve with rice using our Easy Oven Baked Rice method!
