Shrimp Lettuce Wraps

Healthy, Crunchy and ready in minutes!  These Shrimp Lettuce Wraps will be a go to dinner any night of the week!  We drizzle on our spicy yogurt dressing and bit of quick Pickled Onions to kick up the flavor even more!

Platter of Shrimp Lettuce Wraps

These Shrimp Lettuce Wraps hit all of our favorite flavor profiles.  A bit spicy (not too much), crunchy, and best of all it takes about 20 minutes to throw together and the whole family will love them!

Ingredients to make Shrimp Lettuce Wraps

  • shrimp – raw, medium size.  Fresh or frozen thawed and deveined.
  • lettuce for wrapping – we love butter lettuce but iceberg or romaine leaves work great as well.
  • bell peppers – any and all colors.
  • garlic
  • cumin
  • chili powder
  • red chili pepper flakes
  • Spicy Yogurt Dressing – plain yogurt mixed with your favorite hot sauce…so easy!
  • Pickled Onions  and radishes for garnish  if you have them.

We start by tossing our shrimp in the spices and give a quick saute’ with some bell pepper slices and chopped garlic.

What is the best lettuce to use for wraps –

  • Bib or Butter lettuce have broad and pliable leaves that make it easy to wrap.
  • Iceburge is crisp and also has broad leaves but can be a bit less pliable.
  • Romaine is great when used in a boat type of fashion.

What else can I serve with Shrimp Lettuce Wraps.

  • Pickled Onions are a great addition.
  • Radishes
  • Thinly sliced cabbage
  • Coleslaw – which can go  in the wrap or on the side.
  • Asian Rice Salad

How to make Spicy Yogurt Sauce –

  • Mix one cup of plain non fat yogurt with about 2 tablespoons of your favorite hot sauce, adjust to your liking.  My go too’s are Franks Hot Sauce and Sriracha Sauce.  A pinch of salt and thats it!  Add to a plastic chef bottle and you are so fancy with your lettuce wraps!  I love this sauce on about everything from eggs to burgers!

Shrimp Lettuce Wraps

Ingredients

  • 1 pound raw shrimp medium size - fresh or frozen thawed, deveined
  • 1 head bib or butter lettuce - rinsed and patted dry (see notes above for other varieties of lettuce to use)
  • 1 tablespoon olive oil
  • 1 cup bell peppers - various colors, thinly sliced
  • 2 cloves garlic - minced
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon red chili pepper flakes
  • 1/2 teaspoon salt

For Spicy Yogurt Sauce

  • 1/2 cup plain yogurt - any fat content
  • 2 tablespoons hot sauce - Franks or Sriracha works great
  • pinch of salt

Instructions

  • Whisk together yogurt, hot sauce and salt for Spicy Yogurt sauce. Store in refridgerator while preparing shrimp wrap recipe.
  • Pat shrimp dry with paper towel. Sprinkle with cumin, chili powder, chili flakes, and salt. Toss well.
  • Heat skillet on medium high heat. Add olive oil. Add bell pepper and cook for 2-3 minutes. Add shrimp and garlic. Cook for 2 minutes, turn and cook for another 2 minutes. Cook until shrimp is cooked through. Remove from heat.
  • Line platter with lettuce leaves. Spoon several heaping tablespoons of shrimp mixture into middle of a lettuce. Garnish with additional toppings of your choice including pickled onions, radish and cabbage.
  • Drizzle on the Spicy Yogurt Sauce and serve immediatly to keep that lettuce crunchy!

Notes

Store any unused shrimp in fridge for up to two days.  Store lettuce separately.
