Salted Caramel Chocolate Rice Crispy Treats

Crunchy, salty, sweet, Salted Caramel Rice Crispy Treats are our new favorite sweet snack around here.  A traditional rice crispy treat meets caramel sauce, salt, and topped with an easy microwave ganache. We have fallen hard for these yummy treats and we know you will too!

Don’t share these with the kiddos, hide them away and eat them secretly in the pantry, garage maybe even the bathroom, or wherever you do your secret eating.   Rice crispy treats are one of the finer things in life.  They just need a little added flavor to make them fancy! I made these for my girlfriends and put them in these boxes from Amazon. I love keeping these around the house for treats for friends and neighbors.

Making Salted Caramel Rice Crispy Treats

Caramel sauce and salt is added right to the melted marshmallow mixture before the cereal is added, and the rice crispy bars are topped with a quick cooking chocolate ganache.  Don’t let the word ‘ganache’ word scare you.  It’s just warmed up cream and chocolate chips. It makes for a deliciously soft, creamy chocolate that compliments the crispy cereal so well.

Once you’ve made the ganache, let it cool a little until it’s slightly thickened, and then pour it over the top of the rice crispy treats. Sprinkle with sea salt (my fave kind here!). Next, pop it in the refrigerator for about 10 minutes to allow for the chocolate to set (longer if you prefer). That’s it! It’s a really simple recipe but it’s way more sophisticated than regular cereal treats.

The best way to slice these is with a knife. If you want a super clean cut, wipe the knife in between each cut to prevent the chocolate from spreading.

Salted Caramel Chocolate Rice Crispy Treats

These decadent rice crispy treats are so good! Store bought caramel sauce is mixed in with the marshmallows to make a salty sweet treat.

Ingredients

Salted Caramel Rice Crispy Treats

  • 2 tbsp butter
  • 10 oz bag of marshmallows
  • 6 cups Rice Krispie cereal
  • 8 oz caramel sauce in you can't find this. Add 1 teaspoon of salt to jar of caramel sauce
  • 1 tsp sea salt
  • 1 tsp vanilla

Ganache Topping

  • 3/4 cup heavy cream
  • 12 oz dark chocolate chips
  • Sea salt for topping

Instructions

  • Butter a 9 x 13 pan.
  • In large pot, melt butter and marshmallows. Bring to low simmer. Marshmallow mixture may slightly brown and that's okay, it adds to the flavor. Turn heat off once bubbling.
  • Add caramel sauce, salt and vanilla. Stir well to combine.
  • Add Rice Krispie cereal and stir well.
  • Pour into prepared 9 x 13 inch pan. Place a piece of parchment paper over top and flatten to smooth (mixture may still be warm, add a towel on top if necessary).

Ganache Topping

  • Microwave cream until just barely bubbling. Be cautious, it's hot. Add chocolate chips and whisk until well combined.
  • Let cool 10 minutes and pour onto rice crispy treats. Sprinkle with sea salt as desired.
  • Allow to cool in refrigerator for at least 10 minutes (but preferably 30 minutes). Slice, serve and enjoy!

    I just made your rice krispie treats. I haven’t tried them yet but they look delicious. I do have a question though, you list 1 tsp vanilla but the directions don’t tell you where to add it. Can you let me know?
