Winter Italian Salad

We love a good healthy salad and using Dandy® celery as the base for this Italian Chopped Salad makes it crunchy, and so satisfying! We use a homemade vinaigrette to keep it tangy and flavorful.

There is something so satisfying about a fresh, crunchy salad. We love this salad for the Fall and Winter seasons; the ingredients are readily available year round, and using celery as a crunchy base really adds to the fresh taste. 

Fresh celery has a delicate flavor that when paired with tangy dressing, elevates the flavor of this Italian salad to another level. Rough Chopping Ingredients Makes for the Perfect Crunchy Salad

To start, rough chop the celery. We love Dandy® celery because it’s already been washed and cleaned so well, all you have to do is open the bag and chop it.

Side Dish or Main Course…This Salad is Versatile!

Next, chop the remaining ingredients. We like everything in this salad to be rough chopped. This salad has so many good ingredients it could either be a side dish or a main course. If you need more protein, you could add some extra pepperoni or salami (even thick sliced would work well, too).

Homemade Vinaigrette

After rough chopping the salad, set it aside and make the dressing. In a small jar, combine the vinaigrette ingredients. We use dried basil, but you could easily use fresh, too. Rosemary, thyme, oregano and parsley are all great options whether dried or fresh.  Wait to toss salad until just before serving to preserve freshness and to keep it nice and crunchy.

Pour the dressing over the salad, and toss well. We love this salad served with crostini on the side, or even homemade rosemary crackers.

Ingredients

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 1 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp granulated garlic
  • 1/4 tsp pepper

Salad Ingredients

  • 2 cups rough chopped Dandy® celery
  • 2 cups arugula
  • 1/4 cup chopped pepperoni
  • 1/4 cup chopped salami
  • 1/4 cup chopped red onion
  • 1/2 cup chopped tomatoes
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup pepperocinis

Instructions

  • In a large bowl, add arugula. Top with chopped Dandy® celery.
  • To salad, add pepperoni, salami, red onion, tomatoes, mozzarella, and pepperoncinis. Set aside.
  • Make dressing: combine olive oil, red wine vinegar dijon, dried basil, salt, pepper, and granulated garlic. Whisk well to combine, and immediately pour over salad.
  • Toss salad, and serve immediately after dressing.
