Don’t you love having an appetizer recipe for those last minute get togethers? This one is so simple. Canned artichoke hearts are dipped in pesto, then rolled in panko crumbs for a crunchy exterior, and flavorful interior. Dip them in an easy pesto dipping sauce and in about 15 minutes, snack time is ready.

Artichoke Heart Appetizer
I had a can of artichoke hearts from Trader Joes, and a jar of my favorite pesto from Costco). I always have panko crumbs on hand, I was having some friends over, and I knew I had about 20 minutes to make something good. That’s the exact story of how I came up with this recipe, and it will be in my rotation for a long time! Something about a juicy artichoke heart with flavorful, herby pesto, and a crunchy coating, it has all of the elements. I like to give a little squirt of lemon for brightness. Artichokes and lemon are besties, ya know.
Ingredients:
- 1 can of artichoke hearts
- I used whole, but you can use halved or quartered as well.
- Pesto
- The good stuff! My favorite store bought pesto is Kirkland brand from Costco. It has super fresh ingredients, a bright green hue, and is the most flavorful, natural pesto I’ve found next to homemade.
- Panko Crumbs & Flour
- Flour to coat the artichoke hearts so the pesto sticks better.
- Toss the panko crumbs in olive oil so they get nice and crispy in the air fryer.
Air Fried Artichokes
If I could give you one tip to make this recipe a success, it would be to really, throughly dry your artichoke hearts. After that, combine panko crumbs with a little olive oil, and set aside.
Drain them in a colander, and then use a paper towel to remove excess moisture. After patting them dry, coat them in flour, then dip them in pesto, followed by the panko crumb mixture. Place them in the air fryer basket, and air fry for about 7 minutes.
Serving Air Fried Artichoke Hearts
I like to serve these with a squirt of lemon, and a side of yogurt-pesto sauce (1 tbsp yogurt, 1 tbsp pesto). You could also serve these with lemon dill sauce. Place them on a platter with some parsley or basil for garnish, and serve! Super easy.
