Quick Pickled Cabbage

Quick Pickled Cabbage is crunchy, tangy and incredibly easy to make.  We use our standard quick brine that we use on our Quick Pickled Cucumber recipe. Vinegar, sugar, water and salt.  Nothing fancy, just fresh crunchy veggies.

Easy Pickled cabbage in a mason jar

We make batches of this pickled cabbage all year long.  Pile it on salads, sandwiches, taco’s and as a condiment to any simple dish.  It elevates every plate we put it on!

Ingredients to make Quick Pickled Cabbage –

  • Cabbage – we love vibrant color of purple cabble but green cabbage will work just as well.
  • Vinegar – white vinegar will help keep the cabbage a vibant color but we have used apple cider vinegar and we love the extra tang.
  • Sugar – just regular everyday white sugar.
  • Salt
  • Spices – although we keep our brine simple, add ins could include – sliced onions,  garlic, peppercorns, ribbons of carrots which can add an additional sweetness and color.

How long does cabbage take to pickle –

  • Unlike our Pickled Cucumbers which pickle quickly.  This pickled cabbage recipe will want to sit for at least an hour.  Cabbage is much tougher and depending on how thin or thick you slice it the longer it sits the better it gets!  1 to 24 hours would be our recommendation.

Start by making your easy brine.  Simply mix the vinegar, water, sugar and salt.  Microwave in a microwave safe bowl like a measuring cup for just one minute.  Stir until the sugar and salt are completely dissolved.

Slice your cabbage – Cut in quarters and remove the core.  We simply use a knife, but a mandolin will work well.  I like to keep my fingerprints so I avoid them.  I am known for kitchen accidents 😃

You can see we keep  our sliced cabbage a bit on the thick side.  I find it holds up better all week in the refrigerator.  You really can’t go wrong, either thick or thin. Thick  will take a bit longer to brine or thinner to help the process along.

Pour the brine over the cabbage.

NOTE: It is not necessary to use Mason type jars, we use all kinds of glass containers, especially if making a large batch.

Press the cabbage down and continue to add the brine until covered.

Store in the refrigerator for up to two weeks.  Freezing is not recommended.

NOTE:  DONT TOSS THAT BRINE! – Simply fill it up again with more cabbage!  (discard after two uses).

Ingredients

  • 1 small purple cabbage (or green cabbage) about 6 cups shredded
  • 2 cups vinegar white or apple cider
  • 1/4 cup white sugar
  • 1/3 cup water
  • 4 teaspoons salt

Instructions

  • Quarter cabbage and remove core. Thinly slice using a knife or mandolin.
  • Combine brining ingredients in a microwave safe bowl. Microwave for just one minute. (or heat in a saucepan until just warm). Stir until sugar and salt is completely dissolved. If your brine gets to hot, let cool to just warm.
  • Add cabbage to glass containers of your choice. Pour brine over the cabbage pressing down to add enough brine to cover the cabbage.
  • Seal your container and store in refrigerator for 1 hour to 24 hours for a full brine.
  • Cabbage will keep in your refrigerator for up to 2 weeks. NOTE: Keep the brine! Add another batch of cabbage to the existing brine. Discard after second batch and make a fresh brine.
