This easy Thai Peanut Salad Dressing is super simple and uses a peanut butter base for the best flavor combined with fresh ginger, soy sauce, and a few other pantry staple ingredients. This is a flavorful but simple to make dressing that is perfect for salads, and even as a dipping sauce for chicken and fish.
Thai Peanut Salad Dressing Recipe
Every time I make this dressing, I think ‘this is the best sauce I’ve ever made’ and it is so easy! I like to use a reduced fat peanut butter but you can use any peanut butter you like, even an all natural one. I’ve used this recipe as a salad dressing, but it also works great as a marinade or a dipping sauce for chicken, or fish. It’s also just delicious with some celery dippers!
Ingredients:
- Peanut Butter
- Use whichever type you prefer.
- Rice Vinegar
- If you don’t have rice vinegar, you can use regular or apple cider vinegar in a pinch.
- Lime Juice
- Fresh squeezed is best.
- Vegetable Oil
- Substitute olive, or avocado oil if you prefer.
- Sesame Oil
- Sesame oil is a for flavor only.
- Soy Sauce
- Coconut aminos works as well.
- Honey
- Agave works as well.
- Garlic
- Jarred will work. Granulated will work in a pinch.
- Ginger
- Paste will work.
- Salt
- Use a light hand and season as you go. You may not need much depending on the type of soy sauce you use.
How to make Peanut Dressing
I like to make this in a blender. It pulses the dressing well and really makes sure that the peanut butter is well incorporated with the other ingredients.
- We are huge fans of the Nutribullet blender. It makes the best dressings and smoothies and so easy to use.
- If you don’t have a Nutribullet, that’s okay! A food processor, immersion blender or just a regular blender will get the job done.
- If you don’t have a blender, make sure the peanut butter is slightly warm and use a hand whisk.
Add all the peanut dressing ingredients and blend. Doesn’t get much easier than that!
Serving & Storing Peanut Dressing
I like to serve this on a salad with rotisserie chicken. It makes for an easy weeknight dinner my whole family loves! If I have leftover dressing, I like to store it in a mason jar with a lid or in a salad dressing bottle. It will last for up to 4 days in the refrigerator (assuming fresh ingredients were used). Because of the fat content in peanut butter, it can get a little solidified in the refrigerator. Let it sit for about 10-15 minutes and then stir if this happens.
