These Lemon Garlic Shrimp and Asparagus foil packets come together so easily- 5 minutes of prep, 20 minutes of cooking, and BOOM! Dinner is ready!
These are Keto friendly, Whole30 friendly, Weight watcher Friendly- there really isn’t a diet these aren’t friendly with. Healthy, delicious, and easy…that’s what Laughing Spatula is all about!
Start the process off by washing your asparagus, rinsing your shrimp (devein and deshell if it’s not already). I left the tails on mine for visual aesthetic but you could certainly take them off.
Next, we’ll mix a little mixture of yumminess (technical term) to give flavor to our shrimp and asparagus. Butter, parsley, lemon juice, paprika, garlic, and lemon zest. If you’re on the Whole30 diet, use Ghee as it’s compliant and butter is not. Trader Joes sells it in a little bottle and it’s very inexpensive.
I made 2 packets out of foil, then placed the asparagus and shrimp into the packet. I divided up about a pound of asparagus and a pound of shrimp between the 2 packets. Then, I spooned on the butter/garlic/lemon mixture.
Then- I added a few slices of lemon- it helps give it that big lemon flavor that we all love!
Tip- Make sure you don’t just put the foil packet into the oven– you never know if it can leak and it creates a big smokey mess. Put your foil packets onto a sheet pan.
Bake for 20 minutes, or until shrimp is fully pink and asparagus is tender, and you got yourself a quick, easy, and healthy dinner!

- Make sure you don’t just put the foil packet into the oven– you never know if it can leak and it creates a big smokey mess. Put your foil packets onto a sheet pan.
- Speaking of foil packets; I make mine by crimping a small dish shape, then adding another piece of foil on top and crimping them both together. Almost like a little homemade casserole dish with a lid, but made out of foil!
- Whole30 Diet-er? Use Ghee instead of butter, even olive oil would work well.
- Not a fan of asparagus? Try other vegetables that steam well! This would be delicious with zucchini, broccoli, bell peppers, or even green beans would be fabulous and healthy!
- Fresh garlic makes all the difference with this; it’s got a much heartier flavor than the powdered/granulated stuff so try to use it if you can!

30 Minute Lemon Garlic Asparagus and Shrimp
Ingredients
- 1.5 lbs shrimp 24/30 per pound. If frozen, thawed.
- 1 lb asparagus ends snapped and rinsed for freshness
Lemon Garlic Butter Mixture
- 3 tbsp melted butter substitute ghee or olive oil if you're on the whole30 diet
- 1 tbsp fresh chopped garlic
- 2 tbsp fresh chopped parsley
- 1 tbsp paprika
- 1 tbsp lemon zest
- 1 large lemon, juiced
- 1 large lemon, sliced for topping see pictures for example
Instructions
- Preheat oven to 375 degrees fahrenheit
- In separate bowl, mix ingredients for lemon/butter garlic mixture
- Crimp foil into a dish like shape, and add asparagus and shrimp. Top with lemon, butter mixture. Top with sliced lemon. Crimp foil 'lid' on top of foil packet to form a pouch.
- Bake on cookie sheet for 20-25 minutes or until shrimp is pink, and asparagus is tender

Sure! Simply replace shrimp with chicken strips so they cook at the approximate same rate as the shrimp.
