We love some easy protein for breakfast and I make these Turkey Breakfast Sausage patties weekly! I love them on their own, or with some eggs on toast. These are super simple to make, and only use whole ingredients for the most flavorful, healthy, and filling turkey sausage recipe.
Turkey Breakfast Sausage Recipe
This recipe is so simple, and we made sure to use whole ingredients to keep it super healthy and guilt free. You can form it into patties, or use it as a ground sausage recipe. I like to form it into patties because they’re so portable on the go.
Ingredients:
- Ground Turkey
- We recommend buying a ground turkey with a higher fat content. Turkey has a tendency to be dry, so by upping the fat content you’ll get a juicer sausage.
- Ground Sage
- Ground Thyme
- Granulated Garlic
- Maple Syrup:
- To get that quintessential sweet flavor, this is an essential ingredient. We used all natural maple syrup.
- Salt
- Pepper
Mixing Turkey with Sausage Ingredients
Add all of the ingredients to a bowl, and mix with either clean hands, or an electric hand mixer. Because turkey has a tendency to be a drier meat, avoid overmixing to keep it tender. Next, you can choose to form the patties immediately, or you can let the mixture sit in the refrigerator until you are ready to cook the sausage. This mixture can sit in the refrigerator for up to 24 hours making it a great make ahead recipe!
Cooking Breakfast Sausage
There’s a few different ways to cook this sausage. I’ll go through each one and you can decide works best for you! No matter which method you use, ground turkey is fully cooked at 165 degrees fahrenheit.
- Pan Cook: This yields the most traditional sausage result. Add about 1 tbsp of olive oil to a pan (make sure it is a pan with a lid) and sear both sides of the sausage on medium heat. This next part is a trick I use for any ground meat patty and it works so great! When the patties are seared, add 2-3 tbsp of water to your pan, and immediately add the lid to the pan (be cautious of splatter). This steams the turkey patties to cooked perfection, and keeps them moist!
- Air Fry: You can air fry sausage patties. Air fry them at 400 degrees for about 7-8 minutes, or until they reach 165 degrees internally. I recommend spraying them with nonstick spray (or even better, spray olive oil) to develop a crust.
- Ground Sausage: Add the meat mixture to a pan with 1 tbsp of olive oil, and sauté, breaking the meat apart (like you would a taco meat) until fully cooked. You can use the ground sausage in omelettes, breakfast potatoes, etc!
Storage & Reheating Instructions
- You can store this for up to 4 days in the refrigerator, using an airtight container.
- Reheat these in a paper towel in the microwave for 30 seconds.
- If you used this for ground sausage, you can reheat it in a microwave safe bowl with 1 tsp of water for 30 seconds. Stir, and microwave again for 15 seconds.

Turkey Breakfast Sausage
Ingredients
- 1 lb ground turkey
- 2 tbsp maple syrup
- 1 tsp ground sage
- 1.5 tsp granulated garlic
- 1 tsp ground thyme
- .5 tsp salt
- 1/4 tsp cracked black pepper
- 2 tbsp water
Instructions
- Combine all ingredients in a medium sized mixing bowl. Mix until fully combined.
- Form turkey into 8 small-medium sized patties and put on a plate. Set aside.
- Heat a medium sized pan with a lid and 1 tbsp olive oil on medium heat. Add patties to pan, and sear on both sides until a golden crust has formed. Having lid ready, add 2 tbsp water, and immediately place lid on pan. Reduce heat to low, and once water has evaporated (about 1-2 minutes), turn off heat. *Turkey is fully cooked at 165 degrees fahrenheit. We recommend using a meat thermometer.
- Transfer patties to serving plate. Serve & enjoy!
